I’ve wanted a cheesy poblano recipe for a long time! There’s a local restaurant that has it, but it doesn’t have chicken and it does have corn. It’s delicious! I’m going to try yours without the chicken. I’ll probably use Better Than Bouillon for the broth since I have it on hand. Thank you so much for this recipe, including how to roast the peppers. I’m a happy camper now!

I will definitely be making this. I love poblano peppers. Even though they aren’t that hot, I learned the hard way I have to wear gloves when handling them. Or I just let my husband do it. 😊

NO, NO, No, poblanos are not a crossbreed with jalapeños! They are a separate species. Some are picante (spicy) some are not. They are a surprise. I’m trying your recipe this weekend, it looks amazing.
