I just love you! You are an inspiration. Though I am older than you, I have learned so much from you. I love the simplicity and wholesomeness and beauty of your videos. My husband and daughters are benefiting from what I have learned. I never thought of roasting or making anything out of pumpkins besides roasting the seeds, I will try this recipe though where I live in Texas, it does not get cold much. It should be cooling down some time in December. It is 85 degrees here!

I’m originally from Puerto Rico and eating pumpkin for us is as normal as eating a potato. I remember growing up my friends always thought that was a little weird. 😂😂 I’ll be trying this recipe out for sure as I’m always looking for different pumpkin recipes. Thanks! 💕

My Paleo Friends- just sub the sugar for maple syrup and use coconut milk or almond milk and you’re 100% Paleo. ❤️ Thank you for a great recipe! I can’t wait to make this! Yum! Edit: I forgot about the butter! Just sub olive oil (and for baking, I use regular olive oil so it is less likely to burn). I’m excited to make this! Thanks again, Lisa!

tried the recipe, it was so good!! It’s December so I couldn’t find any pumpkins anymore so I used 2 cans of organic pumpkin purée and an acorn squash (stock up on acorn squash while you can). I like thick soup so at first I only used 16oz then I realized it was wayyy too thick so I put in the other 16oz, lol follow the recipe!

squash soup - yum yum - I cook for one - this time of year I bake up buttercup squash and freeze in single serving portions - one thing I love making is soup - have just been adding sweet onion whilted down with butter / oil and chicken broth to one of the squash portions and voila I have soup - thnx for this recipe - will have to tweak my soup 😁🤗

Love this recipe, I pretty much do the same with butternut squash, we only seem to have pumpkins around Halloween time here in the uk so I just go with the butternut, I have seen those little acorn squashes in my local Aldi but never used them before, just may have to give it a go after seeing this though. I tried this recipe the other day and I'm absolutely stunned by the richness of the flavour. Just couldn't stop eating and want to make it every week now. What do you think makes it so rich? The 'smokeyness' of the pumpkin because you put it in the oven or the garlic-ginger-combo? I don't know, all I know that my life will never be the same again lolll. Thank you Lisa!

I just made it and it was about 2 hrs standing in the kitchen and I was nervous if I would like it after all the effort and I’m OBSESSED! So delicious! But I couldn’t find on the blog the amount of ginger to add so I did a tsp of minced ginger.

This looks amazing! I'm going to have my hubby stop and pick up pumpkins at the farmers market this week. (The closest to us is about 40 miles away where he works) and some more squash. I LOVE squash on its own, but this just looks amazing. I'm with you on the bacon grease tho. When I cook bacon, I put the grease in a jar in the fridge to use for potato, or even when I'm cooking up onions for a soup or other meal. The flavor the bacon grease gives is just something unique and yummy.

This looks and sounds delicious. I've never been much of a squash fan but since my 6.5yo and I have had to change our diets its becoming our go to. I would have to find an alternative to that sugar you used since we aren't using sugar in our home anymore. Also, made some awesome flourless brownies using pumpkin puree! Super win!

Have you ever used an heirloom pumpkin? I recently won one. It's bigger than the pumpkin you used. Should I only use half of it? Also, do you roast the pumpkin seeds? Do you have a video of that?

Yes! If you need a little extra fat to sautee the veggies, you can add coconut oil or butter.
