Roast Duck
1,2kg duck
Marinade:
4 tablespoons of five-spice powder,
2 tablespoons of salt
Half a tablespoon of sugar
Five-spice powder mixture: star anise, cloves, cinnamon, peppercorns and fennel seeds
(If you can't find the original Chinese spice mixture, you can also use similar spices instead.)
Preparation:
1. Wash the duck. Remove moisture from the duck skin
Apply the five-spice powder evenly on the inside and outside of the duck skin.
2. Put it in a sealed container or plastic bag and place it in the refrigerator for 1 to 2 days.
3. After taking it out, soak it in boiling water for 1 minute to remove the excess spices left on the duck skin.
4. Dry it. About an hour.
5. Now mix 1 tablespoon of honey and 1 tablespoon of vinegar.
Apply it on the duck skin and put it in the oven.
6. Bake at 180°C - 200°C for 1 to 1.5 hours.
