Good piece of advice Rob. Especially when you’re at a remote batch. For anyone interested,My best bit of advice around vacuum packing, isn’t to do with the freezing, but actually more so the defrosting process. Vacuum sealed fish can be defrosted in the bag, in a sink full of like warm water, this way the fish defrosts very rapidly. Now the reason this is so important is because when fish defrosts slowly, it has to sit in its own juices for a long period of time untill it’s completely defrosted. The juices that are excreted from the fillet while it defrosts will deteriorate the quality of the fish extremely quickly, literally within hours it will start to take on the fishy odour, and fishy taste. Defrosted in a vacuum seal bag in water, can be done in as quickly as 30-45 mins so it preserves the quality of the fish incredibly. Hope this helps

I have never heard this. was always told to defrost slowly in the fridge. Only way to find out, I will do a comparison test someday 😜👍

I pulled some fish out of the freezer today from 3 months ago, defrosted the sealed bag in warm water, then served it as plain sashimi to some friends, you could almost pass it off as fresh, if it wasn’t for the slight change in texture haha However, I think if your planning on cooking the fish instead of raw, it’s a lot more forgiving and you don’t notice the change as much

@@MatW4606I was always told the that the texture is what changes (cells rupture more) if you defrost too quickly. Nothing like fresh fish that has not been frozen.

A plastic container should also avoid any freezer burn on the fish, and no plastic would end up thrown on land fills or in the ocean, right?

Agreed but to freeze quickly you would need many small containers. Getting good quality small containers that seal well us not always easy. Also, every trip is different in terms of the quantity of fillets you will need to freeze. But, a good idea anyway because on a trip, you always need ice, going on the trip with these plastic containers filled with an ice block will help with space.
