The same thing happens to me. My computer runs really well on really graphically intense games, but when it comes to Roblox, some games are iffy with performance. I think if Roblox utilized more of the GPU, it could solve a majority of the problems.

Roblox doesnt have much optimization for things in the distance because you cant have lod without making new models to replace the higher quality ones. This means that the maker of the roblox game would have to script things to be replaced or even deshawn completely depending on distance. Games like doom are so much more optimized because of that

You can use MSI Afterburner to see how Roblox utilizes your GPU. Unfortunately, Roblox doesn't like dedicated GPUs and will literally use less of your GPU when in a slightly intensive scenario. To improve your frame drops go to Nvidia settings and Manage 3D settings\Program Settings and then choose RobloxPlayerBeta.exe, then go straight down to Power Management Mode and set that to 'Prefer Maximum Performance'.

honestly as a roblox game dev, making the game run well is hard, most devs just end up making the buildings look absolutely horrrendous, but less detail = better framerate, even if the detail is minute compared to a triple A game.

Roblox depends a lot on RAM Speed, a good GPU or CPU doesn't necessarily mean you will get 1000s of FPS like on other *real* games, though a godly GPU like an RTX 3090 means 200+ frames per second at least on max graphics, depending on what game you are playing.
