An unpolished stone has microscopic holes like pores. They can come from tumbling along a riverbed or in the ocean or under a glacier. Polishing that part out reveals the inside without those pores and creates a non-porous surface that reflects light and protects the gem from oxidative breakdown. It’s not a perfect description but hopefully it helps.
