Born in Philly, grew up in Willow Grove. I just ordered capocollo from Italy. Rolls from Amaroso, boiled ham loaf from ebay. Everything else is local here on the West Coast of Oregon. No trips back to Philly for a hoagie from now on. I missed the trick of spreading the oil/vinegar/seasonings first. Thanks for that.

Oregon is in some ways like western PA. It’s very detached from Philly and many locals have never been to Philly even though it’s the same state of Pennsylvania . Although Oregon is more beautiful than western PA though

The number on thing you never do when making an Italian Hoagie is to pur the dressing on the roll. It makes it soggy from the vinegar. The dressing is always last and poured lightly over the vegetables. Learned this from a hoagie place in Claymont, Delaware called Decostansa's. Best hoagies I have ever made or had.

I moved from Philadelphia to near Binghamton, NY. I was raised in this area. The most frustrating experience here, other than the constant cloudiness? I cannot find a decent hoagie roll. They’re small and too soft. Some baker somewhere could make a killing here if they could make good bread.

A hoagie isn't just relegated to Italian cold cuts because there are different types of hoagies. I grew up in Philly eating many different types of hoagies. The turkey was usually my go-to but every now and then I would have an Italian

I agree. But usually the Italian types are the better hoagies because it has a distinctive flavor. The other non Italian hoagies just end up tasting like generic American sandwiches which is fine but doesn’t have that sparkle.

Yea 100% red wine vinegar will be the best. Vinegar in general is good to have daily to lower blood sugar in case someone like me has diabetes 😊

The vinegar is essential and mix it with oil too. The vinegar adds a subtle sour. The oil helps transfer the flavors and gives it a subtle moist quality to it. The oil and vinegar should be mixed together as one formula. When the dried oregano is added, it gives it that classic Philly hoagie flavor that I remember from the mom and pop delis back in the 1980s.

Is there a special tomato that is used? I saw a sandwich from downtown Philly and the tomato seems like it is light orange and just a thin slice is tangy. So I was thinking it was a special old country variety. Did you go to an Italian market?

Hi Jeanette yes I went to an Italian market. No special tomato is used. What they probably used in Philly was heirloom tomatoes. I just used regular house tomatoes.

i'm born and bred in philly and amoroso's rolls are being eclipsed by liscio's now. they only deliver loose rolls right from the bakery and dont package them. IMHO the loose rolls taste better than the ones packaged for supermarkets. I love extra sharp provolone on my hoagies. hoagies and cheese steaks rule philly cuisine! but only tourists get "cheese whiz" on their steaks. real cheesesteaks use american cheese.

I agree. The problem with Amorosos is that their fresh loose versions (if you can find them fresh in the morning) is better than their mass produced ones in the plastic bag which in my opinion is kinda mediocre. And the newer bakeries in Philly are making better hoagie rolls. The issue is that these higher quality hoagie rolls can be hard to find even in the Philly area since most people in the general public do not make hoagies at home.

Regarding the cheese whiz thing. It’s actually a good and bad thing. Unfortunately Cheeze whiz is the probably the biggest error in Philly food history. The good news is that the some of the newer places in Philly are making their own house versions of melted cheese sauce which is an improvement. Good quality melted cheese sauce is the best cheese for a cheesesteak but cheese whiz is a mistake that should have never been made into the Philly food scene

Hoagie comes first and the knife was from the company that wanted me to talk about it in a Video. I use the knife for cutting vegetables because my other knives are old and don’t cut as smooth as this. Regardless of the knife the Hoagie is #1

Everyone has a different preference, however Amoroso rolls are soft like this which make it an authentic hoagie.

Amosoros does come in medium level crusty if you have a direct connection to the bakery and can get fresh batches in the morning. Those are actually the BEST versions of Amorosos hoagie rolls. Better versions of hoagie rolls are the semi crusty hoagie rolls from Sarcones Bakery in South Philly and other similar types. Another good version is surprisingly some of the rolls from Publix supermarket in Florida

It doesn’t need it if you know what you’re doing. With all the Italian seasoning flavor and the olive oil mixed in well together, no reason to use salt and pepper. But to each their own, I think there’s enough salt products already in the meats that you really don’t need to add anymore and as far as pepper, you don’t really need it when you’re using Italian seasonings

Do not buy rolls in a plastic bag. They are soft and mushy with no Chrisp crust. Total garbage.
