Bahan Bahan untuk CUCUR Pasembur
200ml air
200g Tepung gandum
2sb Gula
½tsp yis kering
¼tsp garam
¼tsp serbuk kunyit
campur semua bahan diatas hingga rata dalam satu mangkuk yang besar. tutup mangkuk biar rehat selama 2 jam.
lepas 2 jam bahagikan tepung cucur kepada 2 bahagian
satu bahagian tepung tambahkan
4tbs kelapa parut (untuk cucur kelapa)
bahagian yang lain boleh goreng cucur kosong ataupun tambah daun kucai dan taugeh. cara goreng tolong refer video chef
KEROPOK PASEMBUR
150ml air
100g tepung Gandum
1tbs tepung beras
sedikit serbuk kunyit
sedikit garam
campur semua bahan diatas hingga sebati dalam satu mangkuk. biar rehat selama 1 hingga dua jam
Kuah PASEMBUR
80ml minyak masak
50g Udang Geragau
5ulas bawang putih
100g Bawang Kecil
tumis bahan diatas selama 3 minit, api medium
lepas itu Blend bersama
80g kacang tanah yang digoreng
250g ubi keledek yang direbus
10 keping biskut marie
1 liter air
Blend hingga lumat, lepas itu alih bahan yang Blend tadi ke kuali.
Tambahkan
40g Gula melaka
5tbs Gula pasir
3tbs serbuk cili
2tbs pes asam Jawa
sedikit pewarna merah (boleh dikecualikan)
1tps garam
masak kuah rojak dengan api medium selama 30 hingga 40 minit.
untuk hidang rojak pasembur
1 cucur pasembur
1 cucur kelapa
1 keropok
1 keping tauhu goreng
4 ketul ubi kentang rebus
1 telur rebus
hirisan sengkuang
hirisan timun
dan kuah Rojak PASEMBUR

Ingredients for Pasembur Rojak
200ml of water
200g wheat flour
2 tbsp Sugar
½ tsp dry yeast
¼ tsp salt
¼tsp turmeric powder
mix all the above ingredients until smooth in a large bowl. cover the bowl and let it rest for 2 hours.
after 2 hours, divide the flour into 2 parts
add a portion of flour
4tbs grated coconut (for coconut Fritters)
the other part can be fried plain or add chives and bean sprouts. how to fry the fritters? please refer to the chef's video
Rojak Crackers
150ml of water
100g wheat flour
1tbs rice flour
a pinch turmeric powder
a pinch of salt
mix all the above ingredients together in a bowl. let rest for 1 to two hours
PASEMBUR Gravy
80ml cooking oil
50g Geragau Shrimp
5 cloves of garlic
100g Small Onion
stir-fry the above ingredients for 3 minutes, medium heat
then Blend together
80g fried peanuts
250g boiled sweet potato
10 pieces of Marie biscuits
1 liter of water
Blend until smooth, then transfer the blended ingredients to the pan.
Add it
40g Gula Melaka /palm sugar
5tbs granulated sugar
3tbs chili powder
2tbs tamarind paste
a little red food coloring (can be omitted)
1 tsp salt
cook rojak sauce on medium heat for 30 to 40 minutes.
for pasembur rojak dish
1 spoon of pasembur
1 cup of coconut
1 cracker
1 piece of fried tofu
4 pieces of boiled potatoes
1 boiled egg
wedge slices
cucumber slices
and PASEMBUR Rojak gravy

Cucur tu cukup satu jam saje chef klu 2 jam agak lama sedikit dia terlampau naik nnti dlm kueh tu kosong lah pengalaman cik cukup 1 jam sudah memadai lah.bukan cocor cucur atau jemput jemput sayur di Singapaore kita panggil jemput jemput sayur dimIndon mereka panggil bakwan sayur ,trima kasih chef kongsi resepi.

resipi chef memasukkan biskut marie...mmg versi ori...sbb saya berketurunan india muslim dan ramai saudara saya dlm bidang nasi kandar.... one of them was my grand uncle....namely Pakeer Mohamed....he came to Penang in 1908....he was only 8 yrs old....and he was a successful nasi kandar businessman...nvr owned a restaurant....he started with kandar....then the push cart and then the three wheeled bicycle.... he had tout my mother a lot of secret recipes which she shared with me....his authentic and most delicious food was also featured in the papers.... he had passed....when he went back to kelang....pushing his nasi kandar push cart after dawn....he fell to his death beside the nasi kandar push cart😢 tq, chef.....the marie biscuits made me share d memory of my grand uncle the master of nasi kandar on social media

​@@hani6018 Ipoh Padang bro. Resepi turun temurun dari Atok mereka yang jual di tempat yang sama. Timetu pakai kandar. Umur saya 65 tahun. Arwah Ibu saya selalu belanja makan kat situ. First time rasa Umur +- 10 tahun. Sekarang ini cucu-cucu dia yang jual. Mereka ada dua kedai kat situ. Bapa mereka sekarang ini buat kuah sahaja di rumah. Jangan lupa mohon keropok udang, ubi kentang dan sotong lebih. Minimuman order teh Cina atau air barli. Mantap 👍👍👍.

Reminds me of an Indian uncle sells pasembor in Alor Setar. he walks around with long bamboo on his shoulders n at both ends hung 2 baskets. It was only 50 sen for a bowl . Those days authentic n delicious,who cares about hygiene
