I've had that cheese from a farmers market, prepared just like the video: a big ol loaf of bread cut in half that they scrape a giant wheel of stinky cheese onto, served with pickles. It was delicious but made me sick because it was soooo much cheese all at once. Minus the salt (the cheese is extremely salty) I would absolutely eat this! A much more reasonable quantity of cheese.
