As for what the "original" configuration of these parts might have been, Ive gone so far as to look at the subtle details of the Stunt versions of this hilt, and as far as the "Luke V2" is concered, it has the pommel cubes of the Tunisia and the angled top grenade ring of the Chronicles, as well as the general spacing of the emitter and windvane which also seems to match the Tunisia prop. This is the combination I went with for my own Roman MK1 kit some years back. EDIT - Funnily enough, I checked the V3 and ROTJ Hero and sure enough, the V3, which was made during ANH, also has the Tunisia cubes and longer "neck" while the ROTJ Hero has the Chronicles cubes, which clearly implies that the latter prop was based in the Chronicles photos, though it also has a longer neck like the V2/V3 Tunisia, but given how drastically different thr rest of the prop is, this should all be taken with a heavy pinch of salt.

That's really interesting and I must say I haven't noticed that the Hero's cubes match the Chronicles! Well spotted! Yeh they definitely took some elements from "both" versions of the MK1 to design and model the cast which gave them the 2+ stunt sabers, that would eventually become the V2 and V3.

Why do they use different versions of the same lightsaber if they never show the character make any changes to it?

It was like that for the OT. Multiple props for hero/belt-hanger and multiple for stunt to accommodate a blade. Most were real world parts and would malfunction, fall apart and have to be repaired or replaced etc. plus over multiple locations of filming and different set conditions (extreme heat and cold) meant that spare parts would always be needed for the actors.
