@Lyudmil Genov they are very good when cleaned, seasoned, and cooked properly. Smell terrible when cooking. Taste great. I recommend a good soul food restaurant as most that serve them, know how to prepare them, God bless

@Lyudmil Genov you are more than welcome my friend, tripe= chitterlings= chitlins', they are all the same thing. In the south of the u.s. we call them chitlins'.

@Lyudmil Genov then there is a great possibility you will like chitlins'. I put 1 or more codiments on mine. Hot sauce or vinegar are great on them. I hope when you get to eat them, they are prepped and cooked properly, if not cooked long enough or if to much they are rubbery like calamri, if right, they are tender and delicious.

Awesome!!! In Mexico we eat the with hominy!! It's called Menudo, and we eat it when the weather it's cold and in the morning! Sunday was my favorite day of the week because that's when they sell menudo. Thank you for your recipes

Tripe was one of those dishes that you grew up on. My parents never made us eat it and I've lately thought about needing a recipe, a good one, that would make tripe a pleasure to eat. This looks like one. You know what they say, no guts no glory.

I found tripe, for the first time, at my local supermarket this morning and came straight to YT to find a recipe. Lo and behold, Chef John delivered. I had it in Italy years ago and loved it. It wasn't cut up, just folded into the sauce. Squisito. Offal is awesome. Chef John, please add braised sweetbreads to your bucket list. You won't regret it. PS - dipping crusty bread into the sauce is a time honored tradition, but if you mop up the leftover sauce in your plate with a piece of bread it's called "scarpetta" which translates to "little shoe". My Italian cousins in Livorno taught me that, even if they had no idea why it was called that 🥿

OMG, I made this last night and it was AMAZING!!! I also used your recipe for the Marinara Sauce. Thank you so much for this recipe Chef John. My family loved it. BTW, Chef John's Marinara Sauce is the best I've ever made. And yes, the mint is the secret. A must for this dish.

I haven't eaten tripe in ages, long since i was a kid. Then i saw my favorite characers from video game eating and enjoying dish with it. it was awesome! so easy to make,and it was not chewy just make sure that you boil it plenty long even if you let it cook 1/2 hour longer (the longer the better) i will use this recipe again....

When I visit Italy every time in Trieste I stop by restaurant and have plate ( large !) of tripes.Now I learn from you how I can make this fantastic dish by my self. Chef John, we eat tripe in our house all the time, we all love it. I had to laugh, when you put the spoon in the dish ready to eat but instead dunked the bread in the "gravy" (our term for sauce).. As before I eat the tripe, dunking Italian bread in the "gravy" is always a first when eating tripe! and then of course we "Enjoy" (sorry stole your catch phase) Love your vids!

My favorite video so far. Tripe is really really good. There's hardly any taste but the texture is just plain awesome. Kinda chewy and if you cook it in a great dish like this one, or the Filipino dish (Kare-Kare), it's FKN AMAZING!
