at a normal temperature its a gas but when they freeze it they can turn it in to a liquid to do thing such as this. so when it warms up to room temp it just evaporates. its basically the same as what's in the air you breath just much colder. I hope this helps.

+Rajesh Gadipuuri as far as I understand, there isn't any liquid nitrogen in the ice cream, the liquid nitrogen is just very cold and freezes the cream when it comes in contact with it. The Nitrogen itself though, naturally evaporates at room temperature, in the form of the foggy vapor you see in the video. By the end of the video all the nitrogen had evaporated out of the ice cream mixture.

there will still be nitrogen gas in the icecream, but air is nearly 80% nitrogen, and we breath that.. so it is safe.

Nitrogen is an element, which is naturally found in a gas form. Liquid nitrogen is nitrogen at such a low temperature that it liquifies. Your question should really have been: is it dangerous to use it to make food? The answer is no. None of the nitrogen remains in the food after a few seconds, since it evaporates. Even if it did, nitrogen is not dangerous or harmful. In fact, it's often used in preserving food, e.g. in cans.

that nitrogen is actually boiling because the ice cream ingredient's temperature is enough to boil it... nitrogen's boiling point is very very low...about -320 F, as compared with other element like water which has +212 F boiling point :)

Noooo! It's not the nitrogen gas you see escaping, it's steam! In fact, nitrogen gas makes up 78% of our atmosphere... and it's colourless :P The heat from the nitrogen is actually transferred to the water vapour in its surroundings, turning it into steam :3 I'm such a chemistry student :'D
