THE THINGS YOU'LL NEED:
Carrot Cake:
1 ¼ cups all purpose flour
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon all spice
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
2 large eggs
¾ cup granulated sugar
¼ cup dark brown sugar
¾ cup canola oil
1 teaspoons vanilla extract
1 ½ cups shredded carrots
2 tablespoons dried currants
Brownies:
½ cup all purpose flour
1/3 cup unsweetened cocoa powder
¼ teaspoon baking powder
1/4 teaspoon salt
½ cup unsalted butter, room temperature
1 cup granulated sugar
2 large eggs
1 ½ teaspoons vanilla extract
½ cup semisweet chocolate chips
Cheesecake w/ Blueberry Topping
1 cup graham cracker crumbs
2 tablespoons sugar
4 tablespoons unsalted butter, melted
Pinch of salt
2 8oz. bars of cream cheese, room temperature
¾ cup granulated sugar
¼ cup sour cream, room temperature
2 large eggs, room temperature
1 ½ teaspoons vanilla extract
2 ½ tablespoons fresh lemon juice
¼ teaspoon salt
(Topping)
½ cup blueberry preserves
1 teaspoon lemon juice
I had so much fun #Trying #Baking these #Dessert recipes in an Instant Pot for the first time ever! I can't believe how well this worked after a little trial and error. I tested it a bunch of different ways and this is the ones that worked the best. I've also started to test bake other recipes as well!

Here is a couple of tips for you. # 1. Use the handle of a wooden spoon to release the steam. #2. Use the handles of the Instant Pot to hold your lid it fits perfectly. I've made both the brownies and the cheesecake many times, delicious!

You can swap out the milk in your recipes for lactose-free milk no problem. I've been doing it for years. And as for the gluten-free, I prefer to use King Arthur's Gluten -free 1to 1 flour. And add just a little bit more extract to your recipe. Hope this helps ☺
