I work in the healcare service industry in a kitchen. I used this recipes ratios and had to modify based on what i had on hand. 1 part brown sugar. 3 parts white sugar. Orange zest. Vanilla cinnamon Allspice Nutmeg Ginger

***** stainless FTW! i only managed to find a stainless stove, all other appliances and surfaces are only sold in professional stores and cost a fortune and would probably trip my breakers everytime i use them. i mean it's 2015. we shoul dbe able to get glass and stainless EVERYTHING!!!

I made these for Christmas this year. I am always amazed at how delicious chef Johns recipes are and this was no exception. After finely chopping 2 tablespoons of rosemary I was reluctant to add so much. If chef John says 2 tbsp have faith, do what he says. The easiest most delicious Shortbread you will ever make. These were awesome! They went so nicely with a good cuppa tea. On a side note, I adapted this recipe to make earl grey shortbread cookies, and they were stellar. (Literally just sub earl grey tea for rosemary lol as simple as that)

These were absolutely delicious!! There was a point about 5 minutes before I pulled them out of the oven that the house overwhelmingly smelled of roasting butter and rosemary. Wow... can't wait to live that experience again.

People (especially me) can't get enough of these delicious cookies. As you say Chef John, unless you tell someone what's in them, they do have a hard time detecting what's in them. One just doesn't expect a cookie to have rosemary in it, especially two tablespoons, but wow....does it work in this recipe! Ii make these all year round and love that their shelf-life is so long, although they are always gone far too soon once my husband smells them baking. Thanks for a yet another great recipe Chef!

I had my very first Rosemary Shortbread Cookie in Florida in 2012 - at Rosemary Beach. It quickly became my favorite cookie! Chef John’s cookies look much fancier than the ones I had…can’t wait to make these!

I made this recipe today! However, because I didn't have fresh rosemary on hand, I decided to use only two _teaspoons_ of dried rosemary. I'm happy to report that the shortbread cookies taste delicious. I was worried at first, since when I initially took them out of the oven, the smell of rosemary was pretty heavy in the air. However, now that they've cooled off, they are deliciously light and crispy with just the barest hint of resinous herb. I'm quite pleased with my results. Thank you, Chef John, for the recipe! In the future, I'd like to try adding different herbs and spices to the shortbread cookies and see how they turn out! EDIT: Two teaspoons of dried rosemary was too much. I'd try using half that next time.

They taste divine! Though I overbaked them by 5 minutes (tip: even if they're not too golden, take them out as soon as the edges are golden!), the taste is still amazing! Wow, I never thought I'd be more delighted by rosemary cookies than the very-sweet chocolate chip ones C: Thanks, John.

Hi John, Short bread is a once a year must have treat for my family, we do it every Christmas. My Great Grand Ma always added a bit of caraway seed to it. So I suggest someday, try a small batch with no rosemary but a bit of caraway, I think that is another fantastic way to do shortbread.

(1 cup) cool unsalted butter, cut into thin slices 1/2 cup white sugar 1/8 tsp vanilla extract 1 tsp kosher salt or 1/2 tsp fine table salt 2 tbsp. finely chopped rosemary (but do not mince, or it may be too strong) 2 1/4 cups all-purpose flour (10 oz. by weight)

By the time cookies were pierced on pan I thought they were a little soft so I put in fridge for 10 min. Turned out to be the right thing bc they were perfect after 50 min in oven. A big hit too - 5 out of 5 people want more. Thanks, Chef.

Thanks for the recipe John! Here's a small tip to shape dough in a close to perfect square or rectangle: 1 - put the dough on a baking sheet 2 - fold the sheet to make an envelope of the desired shape and size around the dough 3 - flip the envelope upside down 4 - use a rolling pin to flatten the dough and fill the envelope to the edge 5 - it's ready to go to the fridge (very useful when preparing butter for croissant dough) My wish would be to have metric system measurements for your recipes (I must confess, you can't find cups in France :'( ) Thanks again and keep sharing those wonderful recipes!

i made a batch of shortbread for Thanksgiving using miso paste and rosemary and i must say it's one of the best things i've ever tasted! the base recipe i use calls for brown sugar, and i must say that it works beautifully in shortbread. you would think it would be too sweet, but it's not - just adds a slightly more complex flavor profile.

@@coldhands4799 the base shortbread recipe that I used is from a vintage cookbook called 'The American Woman's Cookbook'. Since the book is so old, you can find free pdf downloads of it online. All I did was add 2 tbl of both rosemary and miso to the base recipe. So delicious!

I like to ad dried lavender flowers to my shortbreads. Very little goes a long way, since I adore the combination of rosemary and lavender I should try and see if they come out good or soapy! :)

Adam R Shortbread is fairly versatile and adding lemon zest sounds like a good option. I make plain shortbread cookies during the holidays and dip each one about halfway into melted confectionery chocolate after they've cooled. They're also great with a bit of strawberry or raspberry puree drizzled over before serving [dipping them in a bowl of real whipped cream works too]. I may have to try this added rosemary recipe, sounds good.

I've had lemon lavender shortbread, it was divine. I recommend if you do try lavender don't do to much otherwise it's like eating crunchy perfume. I'm not sure how much to use personally, so it's a type of thing to see what works and what doesn't. Shortbread is even amazing without flavoring. So buttery and yummy.

hi chef john, using a rubber/silicon spatula on very hard dough (ur cold butter) may damage it. a wooden spoon is recommended. i always use my stand mixer though. thanks a bunch. im ur #1 fan, maybe #2?

These look amazing! I was wondering if you know how to make a *chewy* shortbread cookie? The only time I've had Rosemary Shortbread (and Lavender, and Cardamon) they were from a special baker at a farmers market that made them with a more chewy texture. I've searched the internet for a similar recipe but haven't uncovered the secret.

Interesting...I've only ever made shortbread with powdered sugar. I do use softened butter (orange almond is a favorite flavoring of mine) Then shape the dough into a rectangular log and chill it, and cut the cookies off of the log, which you can do all at once or just what you need, storing the well wrapped dough back in the freezer for up to 3 months. Love the idea of Rosemary though...might have to give that a try!
