FAQ: Why my cookies flattened while baking in the oven? It might be due to the butter's condition. The consistency is very important if you're piping these cookies. Solution: You can fold in 1 or 2 tbsp of flour, then check if the consistency is slightly thickened. Do not over add the flour. Another way is after piping, you can pop them into the fridge for about 30min, just to hardened it a little, then bake it. If you find after adding 1 or 2 tbsp of flour is comfortable you can bake it straight away.

A tip from a retired baker; when you pipe the cookie dough on a greased baking tray you will see that the cookies bake more evenly and better. So better not use baking parchment for these type of dough.

I made it, but since i have celiac, i changed the recipe and used gluten free flour instead of regular flour, and it turned out perfect. Usually it doesn't work when you use regular recipes, and then switch the flour, but it worked! And i love how straight to the point the video is, no talking, just going straight to the recipe. Thanks for this amazing video! Loved the cookies sooo much!!!🩷

We love these cookies! We didn't have cake flour, so I took one tablespoon out of the cup of all-purpose flour I had, and added in one extra tablespoon of cornstarch. We also added a small dollop (1/4 tsp) of raspberry jam to the center of each cookie before baking, for a touch of extra color and sweetness. It really took it over the top!

To make a cup of cake flour, remove 2 tablespoons of flour from a cup of all-purpose flour and add 2 tablespoons of cornstarch to it, and there you have it...your cup of cake flour!

Those were always my favorite. When I was a kid- I used to stop by the town bakery every day on my way home from school and get 1 of those cookies. They were soooo soft they melted in your mouth. Takes me back to my youth 50 yrs ago!!!!!

It’s so nice to see demonstrations of cookie making without all those bulky equipments / machines. You really can't go wrong with this receipe. I had light cream and not heavy cream in my fridge. I had salted butter and not unsalted ones. The cookies still turned out to taste really good.

I tried this recipe with all purpose flour and used water instead of cream. The batter turns out to be A LOT thicker and it’s hard to squeeze out so I added about 3-4 table spoons of water in place of cream in total. I also added additional 10 grams of sugar because I thought the recipe needs more sweetness. This recipe makes about 30 cookies. The cookies turned out amazing so you don’t NEED cake flour or cream to make this.

Thanks for the recipe! I made these tonight, very happy with how the cookies turned out. I use all ingredients except the cake flour, I substitute it with plain white flour+2 tbsp of corn starch (found this trick on google if you don’t have cake flour on hand). However my batter was thicker than yours, so I had some trouble piping it out. It was tiring but definitely worth the effort 😁

Thank you for this lovely easy to follow recipe. I made these and they came out great!!! And it's my first time baking butter cookies. I did make a few changes to mine tho to suite my palate 😊 > I used milk instead of cream cause that's what I had > One extra Tbsp of sugar > 1 tsp of almond essence > 1/4 tsp of ginger powder > 1/4 tsp of cinnamon > 1/8 (about) tsp of nutmeg I did try piping them....with tip and everything....that was a bust for me so I just piped it through a zip lock bag with no tip.... 😂 N did my best. Not as pretty but definitely delicious 😊

put them in the fridge for 15 mins before cooking to prevent them from melting

Yes, true if butter is too soft it will spread. Refrigerate to harden a bit.

@@lilyleung2237 no actually I tried that too. It's winter. Butter was not soft at all. But still it all got flat 😩. Second batch I left them in the freezer fir about 20 mins. But still the same. What could have gone wrong?

Hi, just my suggestion. After piping your dough on the tray, don't bake them straight away. Put the tray 30 minutes - 1 hour under the fan to dry the dough. Then you can bake them. The shape will remain the same.

Its much easier to pipe by putting just a small amount of batter into the piping bag. Filling up the piping bag with the whole amt will make piping difficult.

Hi. No, cake flour isn't the same as all purpose. Cake flour has a lesser protein content than all purpose and gives baked goods a softer texture. :) Mostly used for cakes of course

I've heard that substituting 2 tablespoons for every 1 cup of all purpose flour, for two tablespoons of corn starch can be used as cake flour...And No, Cake flour doesn't have baking powder already added. Edit: For best results, you should sift the Cake flour substitution at least 5 times

Mine didn’t retain the piping flower shape also but they are still so so so yummy! I used self raising flour and used 2 tablespoons of Skimmed milk instead of cream. Also, I used a cupcake pan so my cookies all ended up in the same round bulky shape rather than falling completely flat, which is great :D
