When we were processing deer in West Virginia, and my son, from St Pete, Fl, went to his Publix and asked about beef fat. They told him they cut certain cuts several days a week, and you can have the fat trimmings, you have to get there at 5 am before they toss them. (So, you probably have to let them know the night before) he brought probably 20# for us to grind in with the venison.
