For future projects, I wonder if slowing down the go-cart and adding weight would smooth it out. Softer tires might help too. Just an idea. 🙂

Or building a stabilization rig into the go cart to hold the camera and even out the shake. I mean, they can mount cameras to cars and Radio controlled cars so why not. Lookup the Freefly Tero with Movi Pro Essentially a huge RC car with a full MOVI gimble on it. I'm sure someone could come up with a decentish DIY solution for the go kart they made.
