Definitely one of our comfort meals. Always LOVED when mom would pound out the meat and assemble rouladen or braciole -- spaetzle or dumplings were usually involved, too. With rouladen we could also have rötkuhl, and perhaps warm german potato salad or buttered parsley potatoes. Mom, her sisters, my uncles, grandparents, and extended family lived through the war. The nazis ripped my oma's earings from her ears. Oma dressed mom and my aunts as little boys. One of my uncles passed of TB. Opa and his civil engineer associates were kidnapped at their office, made to work for the nazis ,-- or else, without even being given a chance to inform the family what was going on. Opa said they did everything that they could to sabotage their tasks, short of being caught. He and his associates were finally released toward the end of the war. I have a picture of opa and I, me sitting on his shoulders eagerly awaiting the black forest's cuckoo clock announcement of the hour in better times. We still have the clock on our kitchen wall. Love memories of mom in the kitchen, her 'peace zone', as she prepared meals that reminded us all of oma, opa, and family. Thanks for bringing back memories!

@@FoodLust Aldi..of course I shop there almost every day. Box of wine (3 bottles) €4.99. But really, next time try a really meaty sausage and wrap the meat + fillings around that. Think you'd love it. My ex inlaws always made it that way. Stunning. Give it a go, you won't be disappointed.

My German grandparents immigrated from Bremerhaven , Deutschland in 1965. My Oma and Opa made this dish ( without the pickle inside ) during the holidays. Boiled Potatoes , Kale , and Sweet and Sour Red Cabbage were the sides ! Thanks for bringing back great memories !!

Just found your channel so this comment is over a year "late." I just wanted to say this gal of German heritage approves, too!! Fine ingredients and legit technique! We ate Rouladen all the time when I was a kid and I make it as an adult, too. Usually served with mashed 'taters and red cabbage. Like beef stew, every family seems to do theirs a little differently. Our family uses julienned (about the diameter of a little finger) carrots and pickle in the stuffing and we alternate pieces down 2/3 of the roll (the roll is beautiful when you cut into it, with the green and orange!). We make an onion gravy, with sliced onions. But the gravy is essentially made the same way, with the fond, wine, beef broth and slurry. Another thing we do a little differently is to partially render the bacon first. It's still soft, of course, so it will roll up. Then we use the bacon grease in the pot to brown the rolls and sauté the onion for the gravy. We use the same timing in the oven, too. Your version looks just as good and I'm going to try it next time, just for something a little different!

Finally got around to making these and they were delicious! I also made some homemade potato dumplings for the gravy. My grandma was born in Czech Republic about 15 miles from the German border. She used to make these sometimes. I make them on occasion. Sometimes I just throw them on the grill with corn on the cob. They're good that way too.

I hAve a recipe for this also. I use sliced carrots, parsnips, pickles and onions. I use tenderized steak. Put Dijon mustard on the meat, add onion, add veggies, roll up and scewer with a tooth pick. Fry in bacon fat, drain. Add one can of Golden mushroom soup, and cook covered for about 45 minutes. I top the roulade with bacon and sauce from the soup, and serve with mashed potatoes.

My mom was German, so I grew up on rouladen and dumplings. She told me that depending on the region of Germany, it could have pickles or not. She made hers without pickles but I'm sure either way is good, if you like pickles that is.

My mom made this all the time when I was a kid. My maternal grandfather, who was a second generation German-American taught my grandmother, who then taught my mother. My mom used flank steak though. And I know a local German butcher shop sells a specific cut but I am not sure what it is. I do know it is for rouladen though, heh.

weird ! the rouladens i buy from the butcher which are soooo good are just seasoned ground beef in the middle . from what i thought classic rouladen was just ground beef in the middle but with a pickle as-well this one is so different !
