I can give you the idea about it, Use Look-Up table in your program. Temperature with respect to resistance given in the data sheet of PT100, use that one. Read the Voltage across the RTD by providing constant current of 1mA to it. You can use either internal ADC or external ADC. 12 Bit ADC is sufficient. For RTD Amplifier with 1 mA current Source check the document of Microchip AN687. The code is developed for one of our client so there is some limitation, hope you understand.
