Oil - 3 tablespoon Fenugreek seeds 1/4 spoon Cumin - 1 teaspoon Mustard seed 1 teaspoon Sauté, add 1/2 cup onions 2 chopped green chillies Yogurt 3 cups Besan 1/2 cup 2 tablespoon garlic paste 1 teaspoon red chilli 1 teaspoon coriander powder 1 teaspoon turmeric Water: 6 cups water Add salt at the end, not now Add yogurt mixture to sautéed spices Add another cup of water (7 cup total) Let simmer for 12 min Pakoras: 1 cup besan 1/4 teaspoon baking soda 1 tablespoon dry fenugreek 1 teaspoon crushed chilli pepper 1 teaspoon whole coriander 1/2 teaspoon turmeric 1/2 teaspoon salt 1 teaspoon garlic paste 1/2 cup onions chopped 1 handful coriander fresh chopped 1 cup chopped or frozen spinach Add water until batter is thick. Let rest for few min. Fry pakoras and add to karhi after it’s done cooking. Add 1 teaspoon salt to karhi after 35 min of simmering Tarka: Oil 1/8 hing 1 teaspoon cumin seeds 4 dried chilli peppers Some curry leaves 1/4 red chilli pepper (add at end, pour hot oil and spices on karhi)

بھئی بیٹا ،کیا خوبصورت اور خوشبودار کڑھی پکوڑوں والی بنائی ھے آپ نے۔ بھئی بیٹا کمال کر دیا تم نے تو ۔ ھم ٹھہرے کڑھی کے دیوانے لوگ ۔جس دن کڑھی بنتی تھی میرے گھر ۔میری امی جان بناتی تھیں ساٹھ سال پرانی بات ھے بچپنا یاد دلا دیا تم نے تو ۔اس دن واقعی گھر میں خوشی کا سماں پیدا ھو جاتا تھا۔ ایک تو تازہ گرما گرم پکوڑے بمعہ تمام مکسنگ میٹیریل کے ،جو امی جان بنتی ھوئ کڑھی میں ڈال رھی ھوتی تھیں ۔دو چار پکوڑے مل ھی جاتے تھے الگ سے کھانےکے لیئے۔لیکن جب کڑھی تیار ھوتی تھی تو جیسے گھر میں بہار آگئی ھو۔گرما گرم چاول دستر خوان پر اور ساتھ میں گرما گرم چپاتیاں روٹیاں۔بھئی بہت ھی مرغوب ڈش ھے میرے گھر میں سب کی فرمائیشی پسندیدہ ڈش ھے ۔جس طرح تم نے بنائ ھے کمال کر دیا ھےواہ بھئی واہ ایسا ھی لگ رھا تھا سامنے سکرین پر ۔جیسے خوشبو اٹھ کر پورے کمرے میں ناچ رھی ھو ۔آج میں نے اپنی بہو سے یہی ڈش تمہارے انداز میں بنانے کی فرمائیش کر دی ھے اورتمہاری یہ ویڈیو کلپ میں نے اپنی بہو بیٹیوں سب کو بھیجی ھے ۔انشااللہ ھر گھر سے نئیے سٹائیل کی کڑھی کی تعریفیں ضرور بالضرور ملیں گی۔ایک معزرت قبول کیجئے کڑھی کے جوش میں آپ جناب سے تم وغیرہ کہہ دیا ھے۔دراصل بڑھاپے میں اچھے کھانے کی تعریف کرتے ھوۓ فطری طور پر بے ساختگی آگئی تھی ۔اسکے لیئ سوری۔ البتہ ایک درخواست ھے اپنی ویڈیو میں میٹیریل کے نام اردو /انگریزی اور مقدار کا درست اندازہ چمچ یا گرام وغیرہ میں ساتھ میں لکھ دیا کریں۔ تاکہ دیکھ اور سن کر درست طریقے سےلکھا بھی جاسکے اور سچ مچ پکا نے کی تحریک بھی آسانی سے ھو سکے۔ آپکے چینل کا ممبر شکریہ اچھی ڈش کا۔ عرفان احمد صدیقی۔ اسلام آباد۔02/09/2021ء

Hi Ruby ji ..😊undoubtedly your recipes are gr8 always ..well dear just want to share my idea that i mostly use cornflour slurry to clean oil and for reuse it ..by heating oil and thn by slowing gas adding cornflour slurry upto time when all stuff become hard or until oil become clear thanks
