Ingredients
2 lbs fresh sauerkraut, drained and squeezed dry
2/3 cup Thousand Island salad dressing
2 (8-ounce) tubes refrigerated crescent rolls (such as Pillsbury)
¾ pound thin-sliced cooked corned beef
8 slices Swiss cheese
Directions
Preheat your oven to 375°F (190°C). Grease an 9X13 baking dish.
In a bowl, mix the sauerkraut and salad dressing until well combined.
Unroll one of the crescent roll dough and place it into the prepared baking dish.
Prebake the dough crust in the baking dish for 8 to 10 minutes, until lightly browned. Remove from the oven.
Layer slices of Swiss cheese on the bottom of the crust. Top with the corned beef and spread the sauerkraut mixture over it.
Place the second sheet of crescent roll dough over the filling and press the edges to seal.
Bake in the oven for 15 to 20 minutes, until the cheese is melted and the crust is golden brown. Let stand for about 5 minutes before slicing. Oh and if there is just one or two of you just cut the recipe in half and use one crescent roll dough and cut it in half and make it half the size.
