I bought a cheap chinese knife sharpener and decided to let you see in real time how it performs. For the hobby knife maker or just a keen cook it works very well.

When sharpening any tool you must form a burr. Then you remove the burr by either going across the grain of a piece of softwood or using a leather strop with a fine grinding paste applied. To keep your blade edge true use knife steel. Still, here you have to gain experience as you use your knives and keep them from going blunt by using and touching them up when necessary. Hope this helps as you said you do struggle. Actually, I have bought one of these too and yes you have to keep the stone moist. I don't take mine out but wipe a rag over the stone when I feel it going dry. Another trick is to make sure you don't have any grease or fat on your knives before sharpening. Remove the grease from the knives by boiling them in water. Otherwise, the stone clogs up. If you have a build-up of fat on your stone then boil it in water. Have to be careful with these stones but always place them in cold water and bring them to a boil. You should see all the fat has gone from the stone as it melts out of the stone. That's from an abattoir worker who sharpened his knives only once a week and used a "steel" to keep the edge true Another trick is you never use oil on an oil stone! Funny it's been called an oil stone when actually it is an aluminum oxide grit with a water-resistant bond used. If you want to use other than water use kerosene but not a real good idea although Kerosene is abrasive but leaves a smell in and on the handles of your knife. Let me know if I have helped you with the ideas I have written to you about sharpening knives .

I set my common angles and made copper tube to slip over the upright rod, marked the angle for each, so I just pop on the right bit to set the angle for each. It can't slip then either. .. I also popped a small rubber O ring on the sliding rod to cushion it's limits, makes it nicer to use, With higher grit , or diamond, stones and a strop you can get mirror results, Aliexpress is your friend for those parts. As for when to stop, that's after you strop the tiny end burr off.

Agreed. If you start w water you can go to oil, if you really want to. But you can't easily go back. I use water on most of mine. Soapy water or generic windex works well. I have bought some old whetstones at garage sales that were pretty dished out or chipped. I flatten them w sandpaper placed on a 1 ft square piece of granite flooring tile I got on close out at a flooring store. Then put them in my ultra sonic cleaner with a healthy dose of Simple Green or Dawn. I run them through a few heated cycles. Then once or twice with plain water. They generally don't seem oily after that and they will also absorb water. True them up Before you clean them. Flattening them first removes a lot of the clogged and oil soaked material, making them easier to clean. Larger whetstones are expensive, I've managed to acquire a few good ones this way, enabling me to have one stashed just about anywhere I'm likely to need it.

This company also sells a clone to the Edge Pro Professional and also Apex. The Apex version is pretty junky but the professional clone is well made and uses a table jig rather than a clamp. Useful on large blades or for someone like me that dies not want the bother of setting up a clamp. Clamps are also dangerous in that you are positioning a giant razor blade directly at you and one wrong move and you get sliced painfully deep. The weak part of these Chinese systems are the stones. Pick up some diamond stones that are 6” or 150mm long. Cut a rat tail file to the proper length for your rough stone. This will never wear out and is ideal for setting your desired angle. Finish off with lapping sheets that go to 60,000 grit and you have a high mirror edge Thanks for the video, very well done. Thumbs up and subed. :)

Measure the angle of the blade itself then flip it and measure the actual blade angle again. Then see how far off it is. I don't see how you can clamp the blade so it's in the middle (= angle on both sides) each time you use it. This is fine to sharpen a blade infrequently, but you will end up re-profiling it each time you put the knife in the clamp. It's always different.

Well the lansky it's a lot better out of the box and comes with better stones, the ruixin could be a lot better in the long run but maybe u gonna need to fix some problems with the clamp, and the stones that u got for free a just trash, but u can get better aftermarket stones that are really good, the only downside is the price around 28 usd for one stone and it can go up to 120 usd

@triune_blades 3 жыл бұрын
I have a lansky and I wish it could pull out and rotate like this one. That's probably the most annoying part. Plus, it doesn't mount to a bench/table like this one does so it's not as secure. The main downside to this system is that it'll be more difficult to sharpen smaller blades. The clamp is so long that it's probably larger than some people's knives. 😳

I've got this sharpener and it's useless to try and get the same angle when flipping over without messing about for ages....this mainly applies to my Shun demascus. Getting my Victorinox set up is easier. The actual clamp and the curves in it is the main problem. It cant the handle curves on the Japanese knife and when flipped gives a totally different angle. Avoid in my opinion.

That is the major flaw with them, there are KZbin videos on how to correct the issue, but none of them have worked for me. Good luck with it.

The Hapstone 2 and the TSPROF's seem to be the best, from the research i have done the Hapstone 2 seems to be good value, but have a look around. But let me know what you decide on and what you think of it when you have tried it. Have a good weekend.😀

@@garyhuston I'm confused about setting the angle. The way I read them, to get a 20 degree angle, you set your protector to add 5 degrees to the 15 degrees built in to the angle of the knife holder. You set the angle on top of the stone to 20 degrees which according to the instructions would be a 35 degree angle?
@garyhuston
@garyhuston 3 жыл бұрын
@@kathyschaefer5623 no, it's way simpler than that. Set your protractor to 0 on the angled casting. Then put it on the stone holder, that is your angle. Move the arm up or down until it reads the angle you want.

The stones will do the job,but just barely.This post is Jan 24 and I have just bought the same unit..The stones unlike the earlier Ruixin model stones, are unbacked. Drop on them on the floor, just the once and they will break. Basically what will be used the most are 1000# and upwards. Also the earlier mechanism to grip the stones had an reversed vee. The latest ones dont hold the stones well at at. My advice would be to epoxy a slightly longer piece of aluminium flat to each stone.A couple of dozen cycles will wear out the white oxide stones.Replacements as singles are impossible to buy. I have opted to remake the holder and buy some expensive stones from upmarket venders

I unfortunately bought onr of these total pieces of garbage. Luckily, I only paid $25.00US for it. The stones are decent and it came with an extra unmounted set. This hunk of junk is very difficult to set a proper angle on and when you flip the blade you have to reset the angle or that side will be off be 3°. Unless you tighten everything with pliers, the thing will work loose and either fall apart or you will lose your angle. The only thing worth having is the stone set. I spent the extra money and bought a Worksharp Precision Elite and got an aftermarket stone holder which allows tou to use any stones you like, a table clamp and a clamp support off of Etsy for another $50. Another $200 for a set of bonde diamond stones that will last a lifetime, and it is 100× better than this hunk of junk Ruixon Pro. Don't waste your money on this piece of trash

mine actually came with 10 stones at $35. but I have found that is pretty excessive. I think the four stone version is probably just fine. i bought a cheap set of diamond stones as well but have yet to use them. I have taken the stone holder off and put on a file though. That worked very well. And I want to find a way to attach a sharp maker triangle or a ceramic rod to do curved blades. i just ordered a cheap ceramic rod but its a touch to thick i need to make some sort of holder for it. im thinking i might set one end in a length of copper pipe with adhesive and then hammer the other side flat. I still think if you could slap sharp maker stones on this thing that would be ideal

I have gotten great results when using pocket knives with relatively straight cutting edges, tantos, butcher/wharncliffe style and whatnot. Stuff thats not over 5-6 inches with curves. Once I stuck a 6 inch chefs knife on it, used the sharpie method and found that I would either have to adjust several times or completely refinish starting with the course stone.
