RUM RAISINS SANDWICH COOKIES 🍪

Hi everyone ☺️ Earlier this week I received a Mexican Rum as a gift and it tasted amazing. It gives off a very sweet cinnamony coffee flavor with a hint of chocolate and raisins. I thought it would pair well with a vanilla buttery cream and raisins so I decided to make a very easy but delicious rum raisins sandwich cookies 😍
With a crunchy cookie crust, a sweet and buttery rum raisins buttercream, & a flavorful raisins soaked in mexican rum and vanilla, definitely a perfect combination of flavors to pair with your favorite cup of tea!
