Yeah these are fun movies. Jackie Chan doing his unusual superhuman action-comedy stunt moves like only he can and Chris Tucker makes a great partner and brings laughs. Lil fun trivia about the Jackson dance Tucker does. He always kicks with the wrong leg. Even Jackson himself told him (Tucker and Jackson became best friends and Tucker defended Jackson in the 2005 trial because Tucker had already met the accusing family before and knew they were scammers) but every time Tucker kicks with the left leg when it's supposed to be the right (You'll see him do it again in Rush Hour 2) :P

He got his inspiration from early silent movie legends Buster Keaton and Charlie Chaplin. He also wanted to distinguish his style from Bruce Lee (who was more serious in his fight scenes). You also need to watch the end credit bloopers which is also Chan's favorite thing to add to his movies. And the late Elizabeth Peña's (bomb technician) descent is Cuban American.

Ok during this time Jackie was new to English films and all so he didn't speak it fluently and didn't understand it well. So there were alot of things they told him to say he didn't know what he was saying. 🤣🤣 That's what makes the bar fight so funny when he says that word. They told him" after the second time you say this there will be the fight sequence" he found out until later what that meant. 🤣

i believe it's not jackie refuses to use a stunt double, it's more of making the movie more seamless because using a stunt double requires them to do multiple takes and edit it in which is more time consuming than him doing it in one take. also, it's jackie. it's near impossible to get a stunt double for him that can take a bump or fall and transition to an excellent fighting choreography in one go.

Then, the police are supposed to contact the consul. I'm guessing here, i don't know how the jurisdiction in cases work.
