We need the following ingredients for Russian green borscht - sorrel soup with egg
600g beef soup meat
2.5 liters of water (for the meat stock)
1 bunch of dill
1 bunch of spring onions
approx. 80g to 100g sorrel
1 onion
1 carrot
3 potatoes
2 hard-boiled eggs

👩🍳 Preparation: Russian green borscht - sorrel soup with egg
1. First we make the meat broth. To do this, we take 600g of beef soup and let it cook for 1 hour and 30 minutes. I like to add about 1 tablespoon of salt.
2. When the meat is ready, cut it into small pieces and let it cool down. We pass the water of the meat stock through a sieve so that it becomes clearer.
3. Next we cut 1 onion into cubes and we take 1 carrot and rub it through a grater.
4. Then we take 3 potatoes and quarter them.
5. Now we fry the onions and the carrots. A few minutes is enough.
6. We put the meat back in our clear broth now together with the potatoes.
7. Try the salt every now and then.
8. We put the fried onions and carrots in the pot and let it cook on a low heat. Until the potatoes are done.
8. Next we cut the spring onions, dill and sorrel. Simply cut finely.
9. We also cut the hard-boiled egg into fine pieces.
10. We now put the whole cut ingredients in the pot and let it boil briefly. After a few minutes it will be ready. Let the soup steep for a few minutes afterwards. With the stove switched off.
11. If you want you can rub 1 garlic clove into the soup.
12. Our green borscht is ready. I like to put 1 dollop of sour cream on the plate.
