I'm from rural Louisiana where farming is still king. I can come off as a city boy, but spent a lot of my youth helping family and friends out on their farms. I am from Ukraine. We never call zucchini caviar "Ukrainian". This dish is popular in Russia, Bulgaria, Serbia and etc. The homeland of this dish is Russia! Tomato paste is always added to the zucchini caviar and no water. Everything is stewed in its own juice. Then it is pressed until it becomes a thick puree. What you have prepared is called a "vegetable salad", it is also delicious. Good luck! like your channel!

​@@12gosiak 3-4 кабачка, 1 большая - средняя луковица, 3-4 зубчика чеснока 1 морковь (по вкусу, я не добавляю). соль, перец, 2 столовых ложки томатной пасты, 2 ложки оливкового масла, маленькая щепотка сахара. Кабачки, лук нарезать, обжарить, добавить мелко нарезанный чеснок. Когда овощи обжарятся до золотистого цвета, сковороду накрыть крышкой, потушить 5 - 10 минут в собственном соку. Добавить томатную пасту , соль, специи по-вкусу, ещё потушить несколько минут, если много жидкости, можно усилить огонь, открыть крышку и ещё потушить несколько минут, пока лишняя жидкость не испарится . Потом переложить всё в миску и размять до консистенции пюре. Можно кушать сразу, намазав на хлеб. Вкусно. У нас ещё готовят очень вкусную икру из баклажан, но по-другому рецепту. 3-4 zucchini, 1 large - medium onion, 3-4 cloves of garlic, 1 carrot (to taste, I do not add). salt, pepper, 2 tablespoons of tomato paste, 2 tablespoons of olive oil, a small pinch of sugar. Chop the zucchini and onion, fry, add finely chopped garlic. When the vegetables are fried until golden brown, cover the pan with a lid, simmer for 5 - 10 minutes in their own juice. Add tomato paste, salt, spices to taste, simmer for a few more minutes, if there is a lot of liquid, you can increase the heat, open the lid and simmer for a few more minutes until the excess liquid evaporates. Then put everything in a bowl and mash until the consistency of puree. You can eat it right away, spread on bread. Delicious. We also prepare very tasty eggplant caviar, but according to a different recipe.

These sunflowers are amazing!! I love them. They look great with the cats and the vase! When I had my own garden at my parents' house, I had the most success with my zucchini and I am glad I cook so much with them. It is sad when insects infest the plants you work hard to produce! There is so much color and beauty in your video! I have never heard of Ikra and it looked good.

It looks good. Zucchini is cheap, but it tastes like green Styrofoam to me. I also think I was force-fed the stuff too much as a child since my father grew heaps of it. I like to use it in zucchini bread and caponata, but this ikra bruschette (plural of bruschetta) gives me another option. Thank you.

Question for you: I tried the recipe in your cottage core baking book for springerle cookies, the dough stayed crumbly, would not mix....I noticed your blog recipe says 1/4 CUP HEAVY CREAM, whereas your Baking Book says 2 TABLESPOONS HEAVY CREAM, it seems the 1/4 cup is correct,? it might have made my dough much better...I had to throw away the whole batch, they were as hard as a rock..... also one recipe says baking powder and the other doesn't???
