I am making this right now and just wondering if you steamed the potatoes whole and then chopped them or did you chop them first then steam? I like steaming the beets whole so they do not bleed. I am going to use my walnut dressing that I have made already, it is similar to your dressing but made with walnuts, balsamic vinegar, garlic, lemon juice, and raisins. It is a vinaigrette. I do not have cashews to do your dressing. Thanks for the video.

Linda Goode not sure how long, but you want the carrots and beets aldente. The potatoes the same but don’t overcook them because they will fall apart

Don't forget the added carrots...those were steamed as well, right??? I wonder if golden beets might not be a good option to prevent so much coloration of the other veggies...

Judi Bryan yes, the carrots were steamed and you could definitely use golden beets. I would definitely try it.
