Excellent recipe. I have had rutabaga coked and mashed with vegan butter but never tried in a soup and this is an amazing idea.

Its an absolutely delicious root vegetable. When cooked it becomes slightly sweet like the sweetness of a carrot. It perfect for soups and you can also boil it and mash it similar to mashed potatoes, for a side dish.

I am always in the look out for new vegetables to try. Asia has a great variety for sure but I live in the US. Lovely to know Rutabaga is available there.

Sim Katyal You are welcome 🙏 I love this instant pot. You can add all the ingredients, set the program and literally walk away or do some errands. Once the program is completed the soup is cooked and stops by itself, how convenient. Well worth the cost and it’s inexpensive.

Is rutabaga called swede too. We get swede here in super mart so can I use that if I don’t find rutabaga

Did your Rutabaga have a wax coating on it? When you started cutting it, the flesh looked more like a Turnip bottom. People get them confused. Rutabaga is usually covered in wax and has an orangish tint. And turns that color when cooked. I think you used Turnip bottoms rather than Rutabaga. I know because I have eaten them for over 50 years.

Hi there, I used Rutabaga in this recipe. It certainly had a wax on it which I had scrubbed off with a vegetable brush but it still had some leftover residue. Rutabagas are waxed after harvesting to keep them from drying out. The wax was sticking to the knife when I peeled the Rutabaga off. The soup tastes a bit sweet because once the Rutabaga is cooked it tastes a bit sweet.

Why would you even call this rutabaga soup? Only about 15% of it is even rutabaga. I’m sure it tastes ok but you need to change the name to mixed vegetable soup with a little rutabaga.

Hi there, thank you for your valuable comment. It is indeed a rutabaga soup. To make the soup you must use an entire rutabaga which as well as other vegetables to enhance the taste. This is how you make other soups like broccoli soup or cauliflower soup. You always use a combination of vegetables for best taste. I hope this is helpful!

@@HelloGreen Where on Earth did you get the idea that you ALWAYS use a variety of vegetables in a soup of this kind? TOTALLY false. Many use one or two such as in celery soup and broccoli soup. Professional chefs make with broccoli, some of the water it was cooked in plus salt and a little onion. That’s it. Even celery soup only adds a little onion and maybe garlic. I want my celery soup to taste like celery as major dominant flavor with the others just to add complexity to the flavor profile. Your soup is a hodgepodge of mixed veg and the rutabaga which has a mild flavor is a very small minority of ingredients. No one would ever detect it with so much other veg. Sorry but even though you may like this and there is no question that it is extremely healthy for you but it is not accurate to call it rutabaga soup. It is a mixed vegetable soup that just happens to have a small bit of rutabaga in it. Certainly not enough to taste.
