What a great idea for a fast, easy breakfast; putting them together and wrapping them is so smart. A bit of sour cream (there goes WW) and pico de gallo would be so good, too. Making a few and freezing them would be cool, when you have a busy day in camp planned, too, me thinks. Making them with Beef Barbacoa would be delicious, too. Thanks for sharing the idea!
