A curiosity from a layman: why transcribe the moves (wasting time and concentration) when, at the end of the game, it is possible to do it by watching the video?

Probably to time consuming. You have to watch all the games again to write it down. So better do it directly. And in Rapid you have enough time for that.

It is an often used technique in chess education. (Or at least it is in Moscow!) The student transcribes her opening moves for later review with an instructor. And it is done "live" not to "waste" concentration, but the point is to focus the students attention on her opening strategy by the act of recording the process as it happens.
