SOJI PANI PURI
INGREDIENTS FOR SOJI PURI:
• 1 cup sooji (semolina)
• 1/4 cup oil
• Water as required
FOR FRYING:
• Oil
FOR POTATO MIXTURE:
• 3 potatoes, mashed
• 1/4 cup chickpeas, boiled
• 1/4 cup onion, chopped
• 1/4 cup coriander leaves, chopped
• 2 green chilies, chopped
• 1 tsp chaat masala
• 1 tsp cumin powder
• Salt to taste
FOR MINT PANI:
• 1/2 cup coriander leaves
• 1/2 cup mint leaves
• 1-2 inch ginger
• 4-5 green chilies
• 1/4 cup jaggery
• 1 tsp black salt
• 1 tsp roasted cumin powder
• 1 tsp chaat masala
• 1/4 cup tamarind pulp
• 3 to 4 ice cubes
• Salt to taste
• Water as required
• 1/4 tsp lemon juice
• 3 to 4 lemon slices
• 1/2 cup boondi
METHOD FOR SOJI PURI: PREPARE THE DOUGH:
• Heat 1/4 cup of oil in a pan until it's hot.
• In a bowl, add 1 cup of semolina (sooji).
• Pour the hot oil over the semolina and mix well.
• Gradually add water while mixing until you achieve a dough of normal consistency.
• Cover the dough and let it rest for a while.
FORM AND FRY THE PURIS:
• After the dough has rested, take small portions and roll them into balls.
• Using a rolling pin, roll each ball into a round shape.
• Heat oil in a pan until it's hot.
• Fry the rolled puris in the hot oil until they are golden brown and puffed up, flipping them to cook evenly on both sides.
• Remove the fried puris from the oil and place them on a plate lined with paper towels to drain any excess oil.
• Serve hot.
FOR POTATO MIXTURE:
• In a bowl, combine the mashed potatoes, boiled chickpeas, chopped onion, coriander leaves, green chilies, chaat masala, cumin powder, and salt.
• Mix everything well and set the stuffing aside for assembling.
FOR MINT PANI:
• In a blender, add coriander leaves, mint leaves, ginger, green chilies, jaggery, black salt, roasted cumin powder, chaat masala, and ice cubes. Blend well until smooth.
• Transfer the mixture to a bowl and add water, mixing well.
• Add lemon juice, lemon slices, and boondi. Mix and set the pani aside for further use.
ASSEMBLING SOJI PANI PURI:
• Take a soji puri and make a small hole in the center.
• Fill the puri with the prepared potato mixture.
• Dip the filled puri into the mint pani and enjoy immediately.
