Nope. Just nope. Many thanks for promoting our cuisine. I'm sure this recipe will give you a tasty dish, but for the record this is NOT a good recipe for Saas ni macchi. If anyone cares to read my take on it, here goes: Absolutely no curry patta. The ginger is suspect too, but I'm going to leave that alone. For a smooth sauce, the cumin, garlic, and green chili must be ground into a fine paste before frying. The thickener is rice flour not wheat (maida). We've always used sugar, but I'm curious to taste what jaggery does to the recipe. The vinegar is added at the end in a mixture with beaten egg...and there is a fine balance between the egg and vinegar. You beat the egg until it's frothy, and continue beating while drizzling in the vinegar...there is a moment when the vinegar will cause the egg to stop frothing (it's really hard to describe), and it's at that moment that you know the vinegar is enough.

Parsis either predominantly use prawns, surmai or pomfret. Pomfret is a staple in any Parsi household. It is also always served in weddings with this exact dish on a banana leaf with a couple of other dishes like sariya & Lagan nu achar, Sali boti and wheat rotlis, Lagan ni marghi, mutton cutlet/farchu, mutton pulao dar and finished off with Lagan nu custard for dessert ☺️

Shobhna, the fish is not uncooked. The dish has amalgamations which do not make it change color that's all! It's very much well cooked and soft enough! I'm a Parsi myself and have been eating this since I was a kid! Yeah, the fact that I've become a vegetarian since quite a few years now is a different story altogether! Mom makes veg. saas now! ;)
