Sablés, also known as a French Butter Cookie or Breton Biscuit, are a classic French cookie originating in Normandy France. The name 'Sablés' is French for "sand", which refers to the sandy texture of this delicate and crumbly cookie. The traditional shape is round with fluted edges and the tops of the cookies are usually brushed with an egg wash to give them a shiny appearance. The finishing touch, which makes them instantly recognizable, is to score a criss-cross pattern on the top of each cookie.

Thank you Stephanie for this recipe, I made them, and they were a great success. Pity I was acquainted to baking too late in life. I would certainly have chosen to be a Baker and not a Marine Engineer. Had I known any better, the Baking profession is much more fun, for me at least. Keep up the good work

I love you Stephanie, you have taught me baking really. Well as Singapore weather are always hot and humid, pastry that I try to do with most of your recipe that need to be chill, I always use this method but instead of baking paper, I use film instead, which chill them better and make it easier to cut out. =) I love all your recipe. Thank you for all your time again. =)

for the shine you can replace the cream with milk works perfectly for taste we add toasted sesame seeds to the dough it's a tradtional cookie in my country for tea time. thank you mrs stephanie

Compliments, beautifully done!! I'd like to put a pinch of sugar in the egg wash in order to make the tops come out even a bit more "toasted" and a bit crunchier to the bite. Thanks for the recipe!!

I run my company's cookie exchange. I love to bake but HATE MAKING COOKIES!! I made these and they were amazing. I put on some French music and baked them. Thanks so much. I also made the lemon shortbread ones too. Very tasty. Thanks so much.

These cookies look like the comercial brand from France, 'Grande Galette', not too sweet, yummy butter flavor and in the case of the galette, a bit salty, which adds a great flavor to the cookie,.....gonna make 'em and try 'em, this way instead of waiting for Costco to import the Galettes from France, now we can have 'em any ol' day we make 'em at home! Large bowl and wooden spoon is old school and my favorite method. I have the mixers and never use them.

Hi, i have tried and keep on making your recipes which are perfect for first time home bakers like me.they actually turn well as it is shown in the video and tastes delicious. I would like to request for a baby/toddler biscuit recipe, which doesn’t stick in their mouth, not crumbles, but just melt in their mouths? I have tried even my own, but they either get hard, or crumbles. Thanks in advance

You could use a light or heavy cream or even half and half cream.

Hi Ms. Stephanie! I am also a baker.. A student actually.. They always tell us to tie our hair up and remove all jewelries when baking.. So, I think it would be nice if you do it too.. Well, you don't have to, just a suggestion :)

I'm sure different rules apply depending on the country. For school kitchens for example you are required by law to wear a cap in Portugal for example.

So is this basically pate sablé , the dough used for fruit tarts? Except I’m pretty sure pate sablé has a bit of almond flour mixed in with the AP.

It would depend on the recipe whether it contains almond flour. You could always replace some of the flour with almond flour if you would prefer it that way.

You could try refrigerating the batter to firm it up.

One cup of flour weighs 130 grams. So 2 cups of flour would be 260 grams.

The egg wash makes the tops of the cookies shiny. If you're going to decorate the cookies with royal icing, I would omit the egg wash.

+Jakob W The temperature given is for a normal oven. If you use a fan, then I would reduce the oven temperature by 15 degree C.

looks good but a question occurs, I always thought that crumbly cookies were made with confectioners sugar, such as pecan sandies which I love.

The may be but its not essential. Icing sugar or powdered sugar or confectioners sugar, whichever you call it, will help to lend "shortness" which is a tender, melt in the mouth texture, however it isn't the only thing that will. Cornflour(which is a component of confectioners sugar), riceflour or potato flour/starch does the same thing. The main thing is that the sugar is totally dissolved, so castor sugar( a small grain sugar used in baking) is useful, and the proportions of butter to flour and sugar is correct.

I use a Kenwood Titanium chef 5 quart mixer. I normally use parchment paper but you can use silpat.

Stephanie, I always enjoy your videos❣️After you roll out your dough, have you thot about turning your cooling rack upside down and gently pressing in the square pattern of the rack into the cookie dough? Then cutting the cookies out. 💕
