When you do a single leg should the lead leg step in or should you just be driving with back legs?and the lead leg knee hits only the mat?

It depends on how close you are to the opponent and typically only the lead leg knee hits the mat.

I am a complete wrestling noob that just does bjj but i thought you are not supposed to collar tie on the same side of your lead leg. Why do all of these guys do it?

Generally you post with your opposite (back) hand to the lead leg, you can absolutely collar tie with the same lead hand once tied up though, depends how confident you are in your lines of defence/attack, definitely not beginner friendly though as leaves the lead leg vulnerable.

It’s because these guys were already in a tie. What you’re referring to is reaching and staring a tie on your lead side
