My mom makes the most delicious, moist, and rich chocolate cupcakes ever. And they are accidentally vegan! I used to ask for them every year for my birthday. Below is her recipe, they taste great with coffee buttercream frosting! 3 cups all purpose flour 2/3 cup cocoa powder 2 tsp baking soda 2 cups granulated sugar 1 tsp salt 2 cups cold brewed coffee or cold water 1/2 cup + 2tablespoons vegetable oil 1 tablespoon vanilla extract 2 tablespoons white vinegar, apple cider vinegar, or lemon juice Preheat oven to 350F. Mix together and sift flour, cocoa powder, baking soda, sugar and salt. In a separate bowl mix water, oil, vinegar, and vanilla. Combine wet and dry ingredients until just combined. Lightly grease and flour two 9-inch cake pans, one 9x13 baking pan, or 24 muffin tins. Pour in batter and tap pan on counter lightly to release air bubbles. Bake cakes for 35-40 mins or cupcakes for 20 mins. Let cool before frosting. Enjoy!
