Why are all the dbzk ones have the opponent guard broken. This kind of gives it an unfair advantage, as it looks go because they have an entire cinematic sequence for all the moves during this

I’m assuming it’s because most attacks in the game are 3rd person view so it would be hard for you to see how the attacks look. Plus, xv2 and BT3 still have some cinematic attacks that can be landed that are similar to kakarots guard break animation.
