Because that's money you don't get back unless you rugpull. Think if it as the price / market cap of your brand new meme coin starting at literally second 0:00 of trading. It has to start with some initial value. For example you might have put 1,000 coins in the LP and provided 100 SOL. Your coin starts out with a market cap of 100 SOL and each coin costs 0.1 SOL. Once it starts trading live the price of the coin can go up or down as can the market cap because people will be willing to buy the coin for more or less SOL for each coin
