They often filmed scenes in episodes straight through without stopping, just like a play. Had Lucy & Desi broke down, it would have been kept in the final show for that reason, but also because it would have been entirely in character.

@@ericandy88 They both held in the laughter as best as they could. The only other time they came close to breaking down laughing (besides the pilot, where Desi holds in from laughing from Lucy making fun of his English, causing Lucy to hold it in as well) was the Hollywood episode when Lucy tells Ricky "I vanced with Dan" then quickly corrects herself and, trying not to laugh, says "I danced with Van Johnson!" Desi then ad-libs "Vanced with Dan?!"

Such a great classic moment, still hysterical. The idea that this is going on at 4:30 a.m. is a riot. "Mexican Hat Dance" is what plays at the end. The first song & dance is "La Raspa," otherwise known by its Cuban form, "El Breako the Leaso!"

The Mexican Hat Dance is a combination of both the Jarabe Tapatío and La Raspa. The Jarabe Tapatío originated as a courtship dance in Guadalajara, Jalisco, during the 19th century, although its elements can be traced back to the Spanish zambra and jarabe gitano, which were popular during the times of the viceroyalty of New Spain (Mexico before independence). La Raspa is from Veracruz. The name is derived from the Old Germanic verb "raspere", meaning "to grate upon", later coming into Spanish probably by the Visigoths.

If you look at the woman to the left of Ethel at :36, that's Barbara Pepper who would go on to play Mrs. Doris Ziffel in Green Acres. Lucy was a very good person who helped people. She and Pepper had broken into show business around the same time and were Goldwyn Girls together. By this time, Pepper could not get work, partially because she was an alcoholic. So Lucy would help her earn money by giving her bit parts on the show.

You have to see the entire episode to get the context. In the beginning, they were all singing and Lucy asks if they are making too much noise so late and the Mertzes say something like "it's music!" but the Mertzes go home and immediately get mad when Lucy and Ricky continue so they were two faced about it. They don't care about disturbing others but when they get disturbed by the very same thing, they get mad.
