In today's video I'll teach you all the secrets to making the Perfect Stuffed Cone. This is one of the most salable and profitable products in the bakery!
In this video I will teach you several flavors of Stuffed Cones and the whole step by step to flavor the fillings and make a very thin bath in the shell so that it becomes crispy and economical and also how to pack the cones. ******** RECIPE FOR TRUFFED CONES FILLING ***********
▪ Base Brigadier
2 tbsp Condensed Milk
2 tbsp milk cream
To flavor the filling, divide the cream into three parts and use:
▪ Nest Filling:
1/3 of the Base Stuffing recipe
30g of Nest Milk
40g of Noble White Chocolate (DO NOT use fractionated. Chocolate is optional, you can do without it if you prefer.)
▪ Chocolate Filling
1/3 of the Base Stuffing recipe
20g of 50% cocoa chocolate
30g of Noble Milk Chocolate (DO NOT use fractionated. Chocolate is optional, you can do without it if you prefer.)
▪ Strawberry filling
1/3 of the Base Stuffing recipe
1 tablespoon of ice cream powder (I couldn't weigh it because it's so light. Use a measuring spoon. You can add more or less powder, according to your personal taste)
Filling Suggestions:
Brownie
strawberry with jam
nest with jelly
Nest with Oreo
Nest with Nutella
Nest with Ovaltine Cream
Laka Oreo
Nutella (add hazelnut flavoring paste + Nutella)
Lemon (add lemon zest)
Passion fruit (add passion fruit reduction)
Coconut (add grated coconut)
Paçoca (add crushed paçoca)
Dulce de Leche and much more!
