FYI there’s no such thing as ‘sushi grade’. That term was invented by restaurant personnel to upswell and charge more. Here in Hawai’i you’ll never see anything labeled ‘sushi grade’ except on menus aimed at tourist. Best advice is to try and get fresh fish, check the eyes and smell the gills. Eyes should be clear and not cloudy. Gills should smell ‘clean’ and not fishy. And for Mexican ceviche you can use store bought salmon. Most of it is flash frozen anyways. Unless you live in the Pacific NW, then aim for the freshest you can find. Trust me, I’m a ceviche chef, Mexican, living in Hawai’i. 🤙🏽
