I just want to share that cooking can be fun and not stressful... but I totally understand about not having enough time, or vegetables going bad. Try starting with buying ingredients you might use more than once first. And buy just enough for what you need.

This looks so good!!!! I'm definitely going to try the garlic chip method! So I'm going back to school soon , and I've been trying to figure out lunches to take other than sandwhiches (so I don't spend money on the mostly unhealthy campus food) and I think I can add this to the list. I've never cooked salmon myself, would I have to cook the salmon thoroughly if I'm making a packed lunch? And this might be a silly question, but can salmon be eaten cold if previously cooked?

Hi ***** you can still just cook it medium rare even if it's a packed lunch. As long as it's flaky all the way through when you try to break it apart, it's cooked. And yes, you can eat it cold... you can even break it apart and put it over salad or turn it into a sandwich too... that would be delicious!

I'm not a fan of salmon. It's heavy and oily to me. But I know how healthy it is for us and would love a great recipe to ad to our meal plan. This may be it! One question. One salmon is "better" than the other. Which one? I always get confused and walk away ...

I can see how you think that about salmon because it definitely is a richer more oily fish but I love it especially when it's cooked just right. You might like the shallot dressing with it because it cuts the richness. I think you're asking the difference between farm raised and wild caught? Some people like the taste of wild caught better and also prefer it because of some of the conditions with farm raised fish, but I'm not that particular.

Donna Fassano wild salmon is known as "Alaskan" or sockeye. do not buy farm raised "atlantic" salmon

You don't have to use it... you can use any herbs you want, even basil or parsley. But dill just adds a really fresh lemony taste.
