If you have an abundance of tomatoes and peppers in your garden, one of the best ways to make use of them is with a fresh garden salsa. I'll be using a bunch of traditional Mexican ingredients in my garden salsa to make a savory blended condiment that can be used for dipping or in cooking. this would make an exceptional enchilada sauce. I'll show you how to make this dish using your barbecue grill to roast the tomatoes and the peppers.
Will also be making pickled peppers. I'll be using the biquinho peppers that I have discovered this year, a very fruity pepper with very little heat. Pickling these peppers in a vinegar brine with some sugar and spices ought to result in a tasty, sweet snack. Come along and let's see how we make use of our garden produce.
Pickled Pepper Brine Ingredients:
1 Cup of Water
1 Cup of White Distilled Malt Vinegar (or any other)
1 TBSP Sugar
1 TBSP Sea salt
1 TBSP Coriander Seeds
1 TBSP Pepper Corns
1 Garlic Clove
1 Bay Leaf
Salsa Ingredients
6-8 Tomatoes, to yield 2 cups or so roasted, skinned if you like
3-5 jalapeño peppers, roasted if you like (I used brown, TAM, and Dieghito jalapeños)
2 small onions
2 small bell peppers, or other sweet peppers if you want better flavor (roast some of them)
4 cloves garlic
A couple of tomatillos (optional)
1 bunch of cilantro tops
1-2 tbsp salt to taste
1 tbsp black pepper
1 tbsp ground cumin
Prepare according to video

I'm really looking forward to having enough tomatoes and peppers to try these recipes out! If you toast the spices in the pan before adding the brine, then you can get more out of them!

Yum! You said it's missing something. And I was thinking cumin. Where's the cumin! I put mine in the air fryer oven, put it on 400f and let it cook for a little while. It's just like putting it in the oven on broil. Putting it on the grill though would be amazing! The smokey flavor yum!. I think I'm too lazy for that though lmao.

We roast all the veggies in a foil envelope in oven and blend. Add a tbsp if apple cider vinegar also. So yum!

We can go through a gallon of fresh salsa in a week .. but it gives us something to munch on while we wait for the fermented peppers to get done. I'm trying to keep at least one pequin pepper plant indoors for the whole year .. we'll see how it does!

Sure, you can use any kind of vinegar, even infused and flavored vinegars.

They just did. I think I attract lot of pollinators this year with intercropping and planting lots of flowers.

Not sure how long it will keep, but in our house it won't last long enough to find out. You could pressure can it if you needed a few years of storage.

Oh yes use all the coriander ! Just cleaned all my garlic , put in jars filled with oil and kept in the fridge. Can be puréed or left whole , keeps forever.

have you ever had a glass crack putting boiling brine in a cool jar? I'm petrified of that so I warm them in the oven until I'm ready to fill them.

I do on a ferment, not so important with vinegar,just rotate the jar now and then.

Mustard seed, dill, bay leaves, cumin seeds, ground red pepper, and maybe some other stuff.

What's the difference between vinegar brine and a salt brine in preserving

Vinegar is acidic, it preserves by the mere fact that little can survive in it. Sal brine preserves by fermentation, allowing lactobacillus bacteria to live in the solution and convert sugars, and the ferenting preserves food. They taste a lot different, and fermented foods are loaded with health benefits.

I don't know canning enough to know processing times off hand, so sorry. We ate the salsa pretty fast, the pickled pepper lasted until just a couple of weeks ago, so almost a year.

They come out every year. That's the sound of hot summer. They do spend a lot of time underground in pupa state, this species is supposed to take around 7 years. But that's for each year's generation. They are here every year.

2 dry gallons is a “peck”, 2 pecks is a “kenning” and 4 pecks is a bushel.
