Yes they are different: egg white is cementing salt.

Branzino is a farmed fish. I've yet to come across one that wasn't fresh

Not always. The real branzino from the Mediterranean can be caught in the wildness, but too many branzino are requested so many of them are farmed. It's like wine: not all the wine we buy can be Sangiovese, Montalcino, Barolo, etc. these are famous names of the country towns in Tuscany and Piemonte (Italy) where the wine is from, but not all the wine bought in. all the world can be from those locations, so maybe grapes can be from nearby places.

Diamond Kosher is not sea salt. They do offer a sea salt but what you're using here is not it.
