I made some steaks recently with salt, pepper, garlic powder and MSG and they were fantastic! I even added some to my cowboy beef rub that has coffee and dried porcini mushroom powder.

I do a dry brine 50/50 with msg and course salt over night and add pepper 30 before cooking it’s so good best way I found to use msg and salt

Lately, I have been seasoning our steaks, lamb, and pork, with the following: 3g salt per pound of meat 1.5g garlic powder per pound of meat 1.5g MSG per pound of meat 0.5g fresh ground black pepper per pound of meat I then vacuum seal and let brine in the fridge for 24 hours before cooking (or transferring to the freezer for a later date). The flavor has been incredible! It really lets the meat’s individual flavor shine through. I’m going to try lowering the ratio of MSG to 1g and 0.5g per pound of meat, respectively, and see what the difference is.

Not through the whole video yet but it's interesting to me how you say that everything containing proteins already has MSG. I pretty much only eat proteins and have no issues but if I try to add even a little bit of MSG it sends me to the bathroom. Now I'm confused why normal meat's and milk doesn't do that to me unless I add MSG? I always figured I was just allergic to MSG.

There are differences between the MSG in food and the purified one we get in the bottle, that could be the difference. 😀 No chemical MSG for you but the natural one is ok!

This was a great test Brother! I actually am intrigued that the opinions of taste were different, but it makes sense, people all have different tastes. I use MSG and salt, but likely a lot less than others do, I'm not big on salt, but some foods, especially starches and eggs explode when you add it and they need it. Kissus for the Missus as always! Speaking of marbling, I recently purchased some Choice steaks from Sam's Club that were as well marbled as good Prime. The Choice, for half the price, was a lot better marbled than their Prime steaks. I grilled one for dinner that night and would have called it Prime if I was doing a blind taste test. It was deeeeelicious! IMO, you can't just go by meat grading. Look at the steaks and judge the marbling for yourself.

Another great video, Ninja. MSG is not a substitute for salt. It's just enhancer of flavors. I think your numbers "C" are missing more salt. I would increase the salt and lowered MSG in "C"s.

I often didn't like the taste of fat on steaks or other foods. For a little while now I've been adding a small amount of MSG to the fat on both sides of my steaks then seasoning the rest of the steak with regular salt and pepper. I love the results and can always eat all my steak and love the fat parts almost as much and maybe even more than the rest of the steak. I just stumbled on this so have no idea if others agree nor have I heard of anyone doing this. As a note I'm usually using cheap steaks because rib-eyes and t bone steaks taste great with just salt and pepper but I can rarely afford such cuts of meat.

@@SaltyTales perhaps I should elaborate. I barbecue and grill a lot and I use MSG+Salt as a dry-brine for every meat that I cook. The combo makes ribs, pulled pork, beef ribs, steak, chicken, etc. even better than they already are.

MSG is actually a naturally occurring substance in food that has been concentrated. 95% of people don't have any issues at all with it but some, a very few people can have a light allergic reaction to higher amounts and in the 80s and 90s, when restaurants were using a lot in their foods (Chinese food is often rather bland and MSG brightens the flavor) and people didn't understand what it actually is so big fussed were made to remove MSG from the menus. "Waje up the flavor! With Accent!" remember those commercials for Accent flavorenhancer? It's just 100% MSG. Unless your one of the few unfortunate, go aheadandtry someon your salads, steaks and anythingelseyou like, it does improvetheflavor of foodswithoutadoubt and you can use less (or for me, no) salt. It's not a laboratory made, caustic chemical and it won't rot your gut or giveyou cancer or scabiesor anything... lol

So you attempted to "remove fat from the equation." Why? Most people look for well marbled steaks? You remove something from the equation by equalizing it in all parts of the equation. How do you know if MSG or salt don't react significantly differently with fat with this experiment? (Plus.. man, you overcooked those steaks!)
