I bought that exact same sous vide stick to heat up water for homebrewing (sparge water needs to be at a certain temperature so it was perfect for it without using my regular Anova). I liked that it would heat up water super fast. One day after about 3 uses, I turned it on, then something started smelling like it was burning. I looked at the screen, and the temperature readings were going all over the place. I unplugged the stick, waited a minute, then replugged it. It was at that point that is stopped working. I tried to contact the company for a return, but nobody answered. Sad because it was a very good machine while it worked.

I have an old Sansaire (they went out of business unfortunately) that still works fine and an newer Anova pro. Both were in the ~$200 range when I got them. I just use a plain cooler for holding the water for sous vide too, and it works fine! I hear you on prices being out of control too!

I use my instant pot for sous vide. No circulation, but the temperature holds pretty well without it. I won't cook steaks any other way after I tried it for the first time.

I purchased a lower priced unit to try this process to see if I would like it, I have the ink-bird 80.00 bucks. I have used it now for two months, I tried it on almost everything I cook. I am totally satisfied. I have done 24 hour cooks, 1 hour cooks, cooks in mason jars and vacuum bags, we have some grass fed free range beef that is to tough to eat, it tastes good but I finally just canned the roasts and steaks in mason jars pressure cooked at 15 psi for 1.5 hours and that works very well. But the sous vide changed all that, I cook the steaks at 130 F for 24 hrs and they are tender and quite tasty. Thank you from south west Missouri U S A

Insta pot has a machine that goes on sale for 70 bucks on Amazon. I have used mine for three years. A no grill no app machine that just works. It's great for the money

I got the 1000w ANOVA cooker, and forget the brand name but a 22 or 24 quart tub with the insulation sleeve, and if I fill it all the way and try to sous vide say potatoes for mashed potatoes it literally takes FOREVER to get to the 190°F ish range. Seems like too much water. and that's after I fill it with straight hot water from the kitchen faucet....so it's already around 130°F lmao. and even though they have the app I'm not too interested....I just like to use the touchscreen on the device itself .....if something is cooking in it I'm close by anyway so meh 😂 thanks for the upload Ninja!!!

Fantastic video Ninja! I never tried sous vide because it seemed like such a large investment to get a quality machine. You just proved that wrong. Now I will invest in a basic machine like this one. In terms of the steak fries, have you ever tried making the fries in either goose or duck fat? As a kid growing up my family ate duck regularly (and goose usually for Christmas) both of which are very fatty. My grandmother would always save the rendered fat for baking or french fries. In my opinion, duck fat adds a luxurious flavor to the fries. You should try it sometime. I know you can order duck fat online, but it might be available from some of your culinary connections in SoFla too.

A thin oil coating to hold spices on the steak probably isn't going to make a difference. It's when there's a bunch of fat like a stick of butter or lots of oil that sucks the flavor out.

As a Belgian living in the US, I have to add that fries are Belgian and not French, they are just called French fries because they way they are cut, just like French cut green beans are not French 😉. You can find KZbin videos about the history, and the secret indeed is to fry twice, and to use beef tallow. Belgians even have a potato (bintje) that is perfect for fries, but they are not available here. But tallow makes a huge difference compared to oil.

I had this same cheapo machine and wanted to say that you don't have do the tap-tap-tap thing for each degree. If you hold your finger down on the screen, after about half a second ofnholding it down the temp setting jumps 10 degrees at a time. I'm a pro chef and have used sous vide setups big and small, cheap and expensive and had absolutely no issues with this cheap little machine's basic functionality - for about a year. The app worked with no issues, it kept even temps, etc but about a year later it started having thermal runaway where it would zoom out of control unattended and then trip an electrical breaker. Not cool if I was doing overnight cooks. When it worked, and I used it a lot, it was a good, cheap workhorse but the way manner in which it died sucked.

I've been saying this for years you don't need a 200 machine. Their are plenty machines around $60 that will do the job just as well. Add a pot you already own and some Ziploc bags from the dollar store you are good to go
