That's how we do it in romania. We have these old file cabinets from the communist era, works like a charm when you smoke meat even for weeks.

A little tip for these cheap smokers, which I learned how to bbq on an old Charbroil Longhorn a long time ago. 1/2 to 3/4 of a chimney of lit charcoal gets you to a solid 250 degree temp. I wouldn't go anything more, there is too much air leakage on these. Even though you use wood chunks for flavor, it still is a heat source. I replenish a 1/2 of a chimney of charcoal of choice every hour or so when temps begin to drop below 250.

Also those cheap smokers seem best when used how my friend uses them. He just grills with them putting charcoal in the cook chamber, and uses the fire box as a place to keep the food hot as it gets done. Lol

Lol.... this is the smoker I have. A couple tips: High temp gasket and silicone to minimize leakage Charcoal bed to start but cook primarily with logs cut down to fix chamber. (Think a normal logs cut down to 4ths or 5ths) Cook with door/chimney wide open (burns more fuel but cleanst fuel Buy fire as far away from Cook chamber to minimize flare ups Temp manage every 45 minutes (by adding fuel)

I would have put the water pan by the fire, to get as much evaporation as possible. That would help with temperature spikes the most, along with adding plenty of moisture.

Wild! It's a great smoker if you follow the instructions. Preheat the smoker for a CPL hrs before cooking on it. Never let it get passed 400 degrees. Add water under the meat prior to cooking. Patina is natural for the smoker, it will make it last longer if cared for as well.

When you buy a cheap offset before you even season it you do the mods to seal the unit and also replace temp gauge the ones that come with it can be as much as 100 deg out and your fuel use will drop considerably. My first one was a Chargrill which in my opinion is a great starter offset .Great video laughed my ass off.

Great one Ninja! I use the water tray trick when I smoke with my ordinary Weber. My biggest issue with a smoker like this is not that it can't make a good brisket (when an expert like you runs it). It's that this thing will fall apart after using it for only a year or two.

I agree! that is why I'm skeptical of it lasting more than 2 or 3 cooks. Just the issue with the paint will make the fire box roust really fast and with that metal quality I doubt it would last even a year. But it is also a popular smoker for beginners... Crazy stuff! 😂😂😂

I bought one of these smokers 2 years ago because it was the only one I could afford and I really missed smoking. It is one of the worst things I've ever cooked on, but with time and practice, I was able to produce some good food on it. I was so happy to upgrade and give the thing away as soon as I was able.

Bro! LOL I bought this grill! It was my first time hosting Thanksgiving for my family. The first try, I was smoking a Thanksgiving turkey! OH MY GOD! I pulled it out SORT OF. It took much longer than I anticipated so the whole family was really pissed off and HANGRY! There was SO MUCH ASH that it was smothering my fire and I couldn't get the temp high enough to speed up the cooking. I continue to use it as a regular charcoal grill and it does the job. But when it comes to smoking... The temperature is so difficult to control. What I have been doing is just cooking my barbecue in the crock pot first and then just hitting it with a low temp smoke for 30 minutes at the end. Believe it or not... This produces WONDERFUL results! In fact, I think you should make a video testing this method out vs. a traditional smoke. I love you both SO MUCH!

I have the same Smoker. To get stable temperature, use less coal and one Big piece of wood. And close the shudder to get minimum air in. Water in helps.

Another good trick it to only light the edge of your charcoals and allow it to burn across during the cook!

@@DayRider76 right, thats a way. I have lots of spare wood. So i mainly use one big chunk of it. You have to regulate air intake or the temperature will skyrocket. One piece of wood easy holds temperature for 4 hours.

For $119 the weber original kettle is a no brainer. So versatile. Grill, smoke, bake , plus there's aftermarket attachments for rotisseries... Planchas....pizza oven.. etc. Saves you two bags of FOGO and a broom the first cook

You should try the smoke vault 24 runs on propane for heat source & can use whatever wood you want. The tempature control is outstanding on those. I was thinking of getting one of those or just to smoke fish a Little Cheif

lol I took an angle grinder to mine and cut the fire box door off and made it wider.. I was stoking that thing like a train... I now use it for steaks... you did an amazing job.

I couldn't quite tell how the charcoal basket in the main chamber looked, but some of those are mode to be flipped over to sit flush to the smoking chamber and it helps distribute the heat and smoke.

Upside down bring other problems… you want the fat cap to be always towards the heat so it renders on the meat. That is why i flipped but never upside down. Hope it makes sense

Cheap electric smokers are great. I've had three, one ruined from leaving it out in the rain, one borrowed from a friend, and my current one with a glass door. They were ALL excellent. Combined with a $30 meat thermometer they can't be beat for taste and price. Got a nice cover for my current one. Won't let the rain and sun take another!

put less coal when you do the smoking part and keep the "doors" closed so wood doesn't ignite, it will slow burn and produce more smoke. No airflow = no oxyjen= less fire = temperature drops! When u keep both doors open the flow is higher an the coal burns faster.....

Not to mention the wind direction, was pushing air right into the box igniting the charcoal which eat all his fuel. The one redflag is that the fire is leaking into the smoker.

WOW Now that took a lot of work just to keep this brisket going. Nice job with what you had. I agree wholeheartedly that this type of inexpensive smoker is not for the novice people with more experience smoking meats would only be able to get the results you did because of your experience. It did look really good I can’t wait for smell of vision to be a real deal. Miss ninja we need more singing from you.

The only real difference between high price and low prices on grills is the space inside and your ability to control temperatures atleast that’s what I’ve noticed when using them the outcome will be the same if you know what you’re doing.

Def stick to the weber kettle for the price as a first smoker. I modded my kettle with a pizza pan underneath the grill grate to act as a heat deflector so you can use the whole cooking surface. It is a pain when you have to add fuel or wood but it's not that difficult to move everything out of the way to add fuel then put back. Either way, thanks for biting the bullet on this one to let us know not to get it lol.

I started smoking with a cheap Lowe’s off-set smoker. A newbie should start somewhere right? I recommend getting an offset smoker for your first smoking meats. One advantage of having one is… Learning and understanding temperatures, whether it be meat temperature, your temp on your smoker, or even the temperature on your digital monitor. And how much of a smoke you’re producing and what type of smoke as well, a thick cloudy smoke is not good, you have to have the “thin blue smoke” look it up. Again Temperature is key for sure when you’re starting out but once you get a hang of it, it’s actually really fun smoking on a offset. If that doesn’t convince you… check out all the bbq pit masters they use offset smokers. Yea they’re professional grade and huge that can smoke to 12-25 pieces of meats. The principal, and the techniques are the same with the backyard offset smokers. They DO NOT use pellet smokers. Prove me wrong then I’ll give you 1 dollar. Oh yes… It’s also inexpensive… if you don’t want to “babysit” your awesome cheap smoker and you just suck at smoking meats. You can just throw it away and it won’t hurt your pockets.

So I actually bought this grill at Home Depot last fall for $59. It was on clearance. It was a low end grill obviously, but I looked online and there are videos of people who bought that exact grill and made some upgrades. The ones I put in were gaskets around every opening so that the smoke carries to the chimney. As well, I bought some food-safe silicone sealant to put around the chimney and all of the screws. For about $25 more it really made a difference!

I bought a $99.00, offset smoker from Wal*Mart and knew so little about smoking meat that I did not even know it was cheap. It lasted me over a year until it turned to rust. My first few attempts to cook on it were okay. However once I got the hang of it, all it took was the aroma of my cooking to bring all my neighbors over with sides and beer. you see it's not really the grill, but the cook that matters.

Can’t get a more fair review than that. Well done Ninja! - You CAN make a good brisket with it...IF you know what you’re doing. -Temp impossible to control without ‘aftermarket’ add-ons. -Plan on using an inefficiently stupid amount of fuel. -The ash blowing all over the meat was particularly disturbing. (maybe install a fine mesh screen. Again, aftermarket add-on.) -The inferior paint will turn it into a backyard pile of rust in no time that the wife will NOT tolerate...no matter how good the brisket turns out.

I bought that grill. It is a lil flimsy and u have to do some work, but it's really not that bad. I mean not everybody wants to spend the money on an expensive smoker. I smoked ribs on it, and I've never even used a offset smoker and it did well for me. I couldnt imagine using 2 bags of charcoal tho. I used maybe half a bag and almost a full bag of wood chunks, so it does eat alot. But I'm no pro, just love bbq

You mentioned how much charcoal and wood it took and I took it to mean it wasn't very efficient. Out of curiosity how much wood and charcoal would you normally need to do this cook using a different smoker?

In the weber, which it is not the best machine for smoking, I will normally use 1/2 a bag or less for this cook. It is all about air control and that is what makes the charcoal and fuel in general go fast. The odd thing is that even using that amount of coals it was very difficult to keep the temp inside constant.

😆 I have an outdoor gourmet smoker but I seasoned it before using it and it’s held up ok 🤷🏻‍♂️ but it’s definitely more work

i own this smoker and turn out great food on it , it is a little bit of baby sitting but its always been some of the best food i have cooked.

Hahaha I bought this grill, have cooked a good amount of wagyu on it. Just cooked some A5 picanha today on it 😂😂🤤🥩 I have added smoke to like steaks but never put coals in the side one, always the main part just only half and put meat far opposite from the fire, add some chips to smoke and close the whole thing up. Since it leaks smoke anyway it works surprisingly well . and have already drilled through the ash catch plate to use the hooks instead of grabbing the grate, it started separating after like 4 cooks

My charbroil offset smoker was bought at walmart 15 years ago, shortly after I got it, it was discontinued? It's the heavy steel one with the side pipe not in the lid. All of my friends and family have been trying to find a grill as good as mine ever since. I guess I got lucky. It's the only grill I use to this day and feel I could out cook anybody with it! I had my eye on it for a while, but couldn't afford the $450 price tag. So my mom got it for me as a wedding gift. Love ya mom.

@@anubaral Oh no, it's worth it. It's 15 years old and I wouldn't sell it for that. It's not anything like the ones you can buy today. It's made out of heavy steel.

I paid 35$ for my smokin ace it cooks like a champ...after some work tho. When people ask me for a good cheap grill i say weber kettle.

Did my second ever brisket in one like this, came out great. Have a pellet grill now, and I have to put a few smoking bits of charcoal in there with it or it don’t taste right

Pit Boss makes Charcoal Blend Hardwood Pellets. Never tried them since I don't have a pellet smoker but according to their claim: "Pit Boss Charcoal Blend Hardwood Pellets offer the bold aroma of oak hardwood with the robust, classic taste of smoky charcoal." Wouldn't hurt to give 'em a try.

@@valvenator no one ever stocks the good pellets in my area, considering getting a pellet machine and just doing it myself at this rate. E.g. local store advertised wine infused pellets, they didn’t stock bbq goods at all, basically told me if it existed they’d know about it 😂

My brother-in-law has that same exact smoker and it sucks lmao I tried my hardest to make some ribs on it and it wouldn’t keep the temp so I just put it on my Pitt boss pellet smoker and called it a day lol

I have an Oklahoma Joes for a first smoker and the paint peeled on the fire box too. A little paint peel is minor.

Clean the Firebox and use Rust-Oleum 2000 degree paint and get you some firebricks and cut them on a wet saw 1/2 to 3/4 in thick and line the bottom of your Firebox and that will protect it. That's what happened to mine and I did that and it looks brand- new months and months later

@@bz7427 - nice! Well thanks for the tip. But I store my smoker in the shed under its cover. I’m not overly concerned about paint peel on the fire box. The sheet metal is of respectable thickness. I can see me having this smoker for years to come as it is right now. Plus when the Oklahoma Joe dies it’s just gonna give me a good reason to upgrade to a better unit. Though the Oklahoma joe Highlander model in my opinion is a very good smoker for a beginner.

I'd buy that, and bolt it to my vw dunebuggy for when we do our yearly Long Lake trip, we stop every five minutes for a beer, so I could babysit it. LOL! Now, as a Ninja in training, I can say, yes, you are a master and every video, you prove it. I trust your review, only a master could make that tin bucket produce that result. The fact it was DEEEEEELLLLLLLLISSCIOUSSSSS! was your knowledge and experience! I just bought the steel for mine, I would like your input, if you have a minute some time.
