I marinade my venison overnight then grill over charcoal & pecan wood... marinade is vinegar olive oil garlic teriyaki smoked paprika salt h pepper... slow roll over the coals to perfect medium rare... amazing 👏

Yup, if there is no fat to render down, you might as well get it just above room temp and call it done. We eat a ton of deer meat and a lot of people will say it's raw because it's so red but doneness is a temp and that temp is low on deer lol

I’ve done a pineapple marinade for some elk meat before it works too but I prefer something simplistic, like salt and pepper maybe some Cajun seasoning, I find that if you marinate elk or bison for too long, it takes away some of that sweet flavor that naturally comes from the fat, especially if you marinate it in something acidic like vinegar it tends to render out.

I had a bison medallion today from a major grocery store brand with a light blue label. I cooked to medium and let it rest for 10 minutes. It was extremely tough.

Thanks for this video I have been overlooking my wild game like venison, elk and Buffalo. The key is the temp of 110° F and a quick sear. I have ways gone to a 128° and quick sear then a ten minute rest. I wonder if you treat grass feed only beef the same as wild game if it would improve the taste and quality, as it is a very lean beef much like Buffalo, deer and elk. Something to try. It is the grains that is fed to cattle to increase fat content in the beef, so we get the addition flavor from those grains going in the meat as fat we so much appreciate in beef. It like duck you don't cook it the same way as one would cook other poultry like duck breast you can cook 128-135°f for rare to medium rate but chicken it has to go above 160°f. If you cooked duck like chicken it would become drier and not as tender as it should be.

Great Vid! I have been blessed to have lived in or at least travelled to areas where I was able to have many types of meats: Moose, Caribou (American), Reindeer (Scandinavian), Elk, Bear and many smaller critters. The tastiest: Reindeer! Direct heat over a wood fired grill. The Norwegians really know their reindeer! p.s. Bear sounds exotic, but it smells like fish when it cooks...

@@SaltyTales Yep. The majority of their diet comes from salmon, at least in the southern part of Alaska (we lived in Kenai, south of Anchorage). Unfortunately, the 2 times we had them-bear ribs- they were oven slow roasted and were tender, but the house smelled like fish for days. Would've been so much better cooked over wood or charcoal.

One ☝️ request to make steak use the hottest chilli flakes and Szechuan pepper (not powder) flakes mix it with oil just like pickle type along with salt. Rub it on steak and cook it and taste it

Not a good video, things were rushed you never said which number/letter was which method of cooking and tasting. The editing was choppy and could be why it seems rushed. Overuse of “beefy” maybe try rich meat flavor, strong or bold(which was used once.) I’d give this entire video a number D+ 🤣🥷 better luck next time.
