When cooking steak you shouldn't go by time, since thickness and temp play a factor in how long a steak would reach a desired temp. The best way to do it is to touch it and use a temp prob to verify.

Well the minutes are more of a range. It’s highly recommended to use a thermometer though

Thats true. I like making my steak medium-well for 12-13 mins. I sometimes have to use the kitchen timer to set it for 6 or 7 mins but it depends on the meat.

@@oumardiop1 don't even remind me lol. That must've sucked. I grew up eating well done meat and i hated it. We always thought that pink = raw, until i got older and did my research and i ALWAYS eat medium rare because it doesn't taste like a tire 😂

Can't forget the importance of seasoning the steak. I grew up eating midrare that was tough af.... of beef tenderloin... learning to cook for myself changed many things. For those who insist on well done, I'll usually cook it outside or deep fried so i smell it less

I personally prefer my steak to be medium rare to medium, but I'll gladly eat a well done steak! I don't get why so many people shit on ones who like well done and say they're ruining a steak. It's what they enjoy, as long as they like it and it's getting eaten then I see no problem!!

Problem really is that almost everybody who takes their steak well done has never tried it any other way so they literally don’t know if they’ll like it. The people who like it well done only like it because they think anything else is raw and disgusting. My mother has always had hers well done and for the longest time always fed me well done, my life changed when I finally had a proper steak, and she still refuses to try anything else.

i like well done but i find that the method for cooking a well done steak is totally different. you have to sear it really well and then finish it in the oven with lots of butter and onions while still being careful not to overcook it.

@@tristanlambert658 doesnt matter. If seeing no pink on the inside gives them peace of mind, then who cares? Let people enjoy food how they want to. Not everyone likes their food the same way as you.

Ninja, I just want to help you a little. Look at you color setting or color profile on your camera. Either that or color grade in post. Your footage had a slight muted color or grayish profile. This can happen if you’re using CLF video bulbs. They are considered fluorescent, so they remove magenta from color by adding a slight green cast. You can counter this by adding a magenta gel to your lights or get a gray card to manually white balance your cameras.

I tried a steak as a teen that was quite "bloody" (i know its not really blood but the iron/copper taste of the juices put me off having it too pink). For a long time i went for well done or medium well. Today i tried it at medium and i think i like it that way now, it was lovely juicy, tender (though i suppose it depends where i eat. I had one at medium well not long ago somewhere else that was tough to chew and kinda boring).

Depending on the cut ill cook it differently. I love well done skirt or carne asada, then sirloin and short loin rare.

When it comes to filets, I especially like them rare. They are a treat that we have sparsely throughout the year. So whenever a holiday occurs, or a very very special occasion occurs, I will always ask for rare.

@kyl bacteria is on the outside of steak, all you need to do is cook the crust on the outside and it will all be safe. Medium rare is a juicy sweet spot, it tastes far better then well done in my opinion.

Ninja, I know your going to hate me, But Well done is actually applicable for some cuts that are a little more chewy and need more cook time. However, you can´t just cook it like medium rare or rare, you have to blanch it and cook it a lower temperature for longer time.

I usually throw these in a slow cooker for about 2 hours, tenderizing the meat a bit, but also keeping the redness on te inside, then sear both sides real quickly, baste and rest and it's a juicy, tender medium rare with any cut

I have been eating well done for my whole life and I'm telling you it's so good but you need to make it correctly First cut the meat into small pieces just like you cut a chicken Now put those into a pressure cooker with some onions some crushed ginger and garlic and some oil on top Cook unit it releases steame 4 times Transfer into a different pot Now add some spices like salt,peper,cumin powder,cinnamon sticks Cook on low heat for like 20-30 minutes You are readdy to go

I agree. One time I had a rare ribeye (ordered medium rare, but it was lukewarm and super hard to chew so I think they gave it to me rare) and it was a nightmare. I'll take a well done ribeye over a rare one any day of the week, while I'd take a medium rare sirloin over well done.

Well done is okay for tougher/thinner cuts like skirt steak. But for a nice cut of steak, medium-rare all the way.

I do pink as long as it's pink. I don't do red because it doesn't break down the tissue enough. I have some flank steak marinating right now with Tabasco Chipotle cilantro red onion and olive oil Serve that up with some like cilantro lime rice and some corn tortillas lightly fried in butter and veggie oil. And some pico... yessir!!!!

I'm a firm believer the cut of meat determines the temperature at which it is cooked, with some cuts being able to favor several temperatures. A good example is prime rib, medium rare or medium is perfect. However, a NY strip steak of choice or select should be medium, a nice prime medium rare. A ribeye medium rare. Side not eBravo on your Medium-Well and Well Done they actually looked properly cooked to temperature and not exceeding the zone. It's a lot harder to cook a good medium well and well done than any other temperature. If you go to far it sucks, if you do it right it can be perfect.

Thanks for doing this experiment. I’m not sure how practical this would be, but for your friends who think that they like well done steak, maybe you could suggest that they try something like traditional barbecue, or braised meet, or Katz’s pastrami. I’m a low ‘n’ slow guy myself, so I’d pick any of those over your average steak any day. However, well done steak? Not so much. Perhaps a more immediate solution would be to cook all of your steaks to medium rare, then take a few, slice them very thin, and re-cook them until they’re thoroughly seared on all sides. To me, that sounds a lot more delicious than well done steak.

My parents only ate well done for 35+ years but when I went to the army as a culinarily specialist and then also went to culinary school and I finally snuck it in and made them a medium steak they never turned back 😂

The only "well done" steaks I cook are Ranchera de Res/carne asada - it is so thin the carryover heat will finish it to well done - perfect for large family gatherings.

I think meat cuts play a lot into it too, though I’m not really sure. I prefer a medium most of the time but I have cooked a well done steak and it still be tender and juicy. I want to say the cut was like top roast or something like that. Not a usual ribeye or sirloin as when I cook those well done they come out pretty tough.

Yeah I think it all depends on the cut. Ribeyes and T-Bones are good well done in my opinion but a sirloin should not be cooked well done at all because it makes it dry.

Well done meat is very good but westerns don't know how to do it If you visit Albania, Greece, Turkey etc You can understand how good it is and how it is done. Meat needs to be cut in thiner pieces needs to be cooked in olive oil mixed with butter and the flame must be low. This procedure makes the meat tender juicy, so delicious and at the same time well done.

Please don’t follow this for well done, they hate doing well done and they just burn it and make it like rubber, for well done just keep flipping it from time to time and slower heat, it cooks it and it stays good

Always grew up sharing steak with my mom because we couldnt afford 2 steaks, and she always got hers medium well so thats how ive always ordered mine because thats all I knew.

For medium well and well done steaks it might be best to cook to medium rare and finish in the oven at 350 for 7 minutes for medium/ 9 minutes for well

Hmm... Well, I suppose it's better than no crust, but there is a difference between a good, brown Maillard reaction crust and burnt.

I spent a long time being raised thinking any pink means you WILL get sick. I now look back and really realize all the times I was served a charred tire wondering why people thought meat was the best food ever was flawed. I had a frozen pre-cooked sliced steak from Costco that was heated up and it instantly outdid every single tire I ate as a kid. I can’t imagine what a medium-rare proper steam tastes like.

I hate to say it but my whole family always gets it medium well to well done 🤦‍♂️ Thats the reason I never do any sort of nice cut of meat for them. Medium rare to medium for me

You have great videos , flakey salt used more for garnish that seasoning. That’s why you have the premature blackening on your steak.

Maaan I’ve tasted a well done steak made by some Korean chefs at a fusion tavern i worked at easily the best I’ve ester. Tasted….these guys had a well done deep fried Craig outside tender inside steak I’m still puzzled how they pulled that off it li teeth just broke apart 🤤🤤

hey just for everyone like me who have an electric stove do not pre heated it Some chefs say to put it at high heat ,and leave it there for like 10 minutes. Do not do it,unless you wanna burn down your house. electric stoves heat up more than gas stoves.

I've tried medium and medium rare quite a few times but man I can't eat that and it is not the flavor it is the texture ! Medium well is the best one in my opinion

I used to eat steak well done because my parents cooked it that way. After eating steak rare a few years ago I know why I never liked my parents’ steak. Never going back to well done! I love steak rare

@BreadButterSugar To each their own....but for me "well done" and "tender and juicy" are mutually exclusive. Oh sure, it may have a fine flavor depending on the rub or seasoning used, maybe even good bark or char. But the texture and the juiciness will have largely been lost, especially if the steak isn't properly rested. All of that fine marbling and fat is lost when it's cooked too long.

Thank you for making a video revealing temps and times for pan seared steak. When I’m serving family ribeye steaks, my rule is you can have your ribeye cooked any way you like, no put downs allowed. Now I know exactly what temp my instant read thermometer should read for each type (rare, medium rare, medium, medium well, and well done) and how long to cook each side to achieve that temp. It's easy knowing the temps, GugaFoods is a great chef at cooking steaks. This man, his steaks all look medium besides the rare that IMO looks medium rare. Honestly, I don't think this guy cooked his steaks good at all. Plain, dry, and rushed.

I just did Salty Tales method 2 nights ago with two ribeye steaks a couple nights ago (using the seasonings we like) in my 40 yr old cast iron 12” cast iron skillet. They were thinner, so I had to adjust the time and rely heavily on my instant read thermometer to get my husband’s steak to just under well done and my steak to just above medium rare. They turned out really well and tasty. I prefer grilling outside, but our patio is buried under a mountain of snow and our grill isn’t high enough btu to cook well in our very frigid temps. Thanks again for the rec. ☮️

im happy anywhere below medium ive tried blue and its nice with the right cuts and i mostly aim for rare to mid rare as i find it the juiciest but ultimatly if you give me anything under medium ill he happy

The well done in the video is basically at the brink of being well-done, which is sufficient for people who chooses that level (you can see tiny tiny spots of pink). The issue with well-doneness in steak is that most people overshoot the timing and get a complete grey steak on the inside... But if it's mostly fatty, then the well-doneness isn't a issue in a fatty steak.

I guess I'm a medium-medium well person. Although I can eat well done, with good sauce or compound butter. Medium rare-rare, maybe? Rare is too "raw" feeling for me, unpleasant to chew.

Medium Rare-Medium are my preferred, but I'll eat Medium Rare to Well Done. Rare is just too raw for me. If it's cooked too much, I just cover it up sauces.

Don't you get a 10° to 15° climb after you pull from the pan. I pull my steaks at 117° and they end up in the 130° range.

@@allistergraham6704 The inside of steaks is sterile because the peice of meat is one solid muscle. That is why you only really need to heat the outside and with good steaks you can even eat em raw like steak tartare.

The red is not blood, it is myoglobin which it is a protein inside the meat, all meats have it in one way or another. The red steak will be juicer and more flavorful than a gray steak as the myoglobin is not cooked. When the myoglobin is cooked then the color of the meat changes to gray and that process changes the flavors of the meat making it less appealing to some people. Also a well done steak will be harder and stiffer also not appealing to some steak eaters. All that combined with the explanation from @J Numismatics is that makes a difference in how people prefer their meat cooked.
