I just started the Givaudan Perfumery School and as I don't have a background in chemistry, I've been looking all over the web to go more in depth about the molecules we're using. Be careful, N has a valence of 3 (i.e N makes 3 bonds) and S a valence of 2 only. You should switch the position of the double bond from C=S to C=N. Apart from that, you made a really good job !

While you are correct about the valency of the N and S atoms, the bonding representation used by Sam is one of the resonance canonicals of the thiazole ring; i.e the bonding does look like that a proportion of the time, however the N and S would be negatively and positively charged respectively. For correctness, these charges should have been included.

Sam so how does the molecular shape of each aroma chemical/material affect/apply in perfumery? Is the shape of each molecule “connecting” to another a determinant of forming accords for example? (The change of smell)

This is a really great question! The short answer is no, the are no rules for using the shape of molecules to help with building a good accord. The longer answer is that in the more technical side of perfumery, there are some reasons it might help. Firstly, it can give you insights into the performance of a molecule; whether it might be more of a top or base note and what mediums it may be better in; for example a candle fragrance or a washing up liquid fragrance. Some times molecules that look similar can smell quite similar, which is useful for categorising them, understanding when they can be replaced with one another, or even help discover new scent molecules in a lab.
