I wanted to laugh at this bit, but as a lover of octopus meat it is truly a shame to eat improperly prepared octopus. By the way @BadWebDiver the purpose of not piercings the ink sac is to not get ink all over the cutting board and the table. The sac bursts in the boiling water flavoring the meat. Squid ink is a popular soup ingredient in many Asian countries as it flavors your soup stalk nicely.
